How To make Mexican Meat Mix
5 lb Beef Roast *
3 Large Onions, Chopped
2 cn (7 oz) Green Chili Salsa
4 tb Flour
1 ts Ground Cumin
3 tb Vegetable Shortening
1 cn (4 oz) Chopped Green Chilis
1/4 ts Garlic Powder
4 ts Salt
Juices From Beef Roast Preheat oven to 200 degrees F. (95 degrees C) Place Beef roast (or combination of beef and pork roasts to total 5 lbs) in a large roasting pan or dutch oven. Do not add salt or water. Cover with a tight lid and roast about 12 hours, or until well done. Or cook roasts with 1 cup water in pressure cooker 35 to 40 minutes. Drain meat, reserving juices. Cool meat, then remove bones. Shred meat and set aside. Melt shortening in a large skilled. Add onions and green chilies. Saute 1 minute. Add green chili salsa, garlic powder, flour, salt and cumin. Cook 1 minute over medium-low heat. Stir in reserved meat juices and shredded meat. Cook 5 minutes until thick. Cool. Put about 3 cups mix into 3 1-quart containers, leaving 1/2-inch space at top. Seal and label containers Mexican Meat Mix and freeze. Use within 6 months. Makes about 9 cups of Mix.

I am using flank steak for my steak fajitas, that I marinade for 12 hours.
I serve my steak fajitas on the warm flour tortilla with sour cream, guacamole, salsa and Cotija cheese.

1 tsp salt
1 tsp black pepper

1 tbsp Oil (for searing)
8 dried red chilies (soaked in 1 1/2 cup hot water)
2 chillies
1 pointed red pepper
1 medium onion
1 tbsp all purpose seasoning
2-3 cups water (enough to cover beef)
1 cup parsely (chopped)
1 red onion (diced small)
1-2 cups mozerella cheese
6-8 mini tortilla wraps
Slow cook beef for 2 1/2 -3 hrs on low heat stirring occasionally.

This Carne Guisada is so tender and flavorful! Diced beef chuck roast in gravy comes together to make a delicious guisada. This works great in tortillas served as tacos or paired with rice and beans for a complete dinner. YUM!!!!!

Ingredients:
2 1/2 - 3 lbs of beef chuck roast diced into 1-inch pieces
1/2 tsp pink Himalayan salt ( use less if you are using fine salt)
1/4 tsp black pepper
1 tbsp olive oil
1/2 cup diced onion
1/4 cup of bell pepper
2 cloves of minced garlic
4 tbsp of flour
3 tbsp tomato sauce
3 cups hot water
2 tsp beef bouillon powder or 2 tsp better than bouillon beef base
1 tsp ground cumin
1. In a hot skillet over medium heat, add the olive oil. Next, add the diced beef. The beef will start to produce liquid. Simmer on medium heat and occasionally stir for 15 minutes or until most of the juice has evaporated.
2. Add the onion, bell pepper, and garlic and saute for 5 minutes or until the veggies have softened.
3. Sprinkle the flour over the beef and saute for another 2 minutes.
4. Add the tomato sauce and stir to combine. The sauce should start to brown. Add 3 cups of water. It will sizzle! Next, add the beef bouillon and cumin. Stir everything around making sure to scrape the bottom of the pan. Bring to a boil. Once the guisada starts to boil, set heat to low and reduce to a gentle simmer. The gravy will thicken as it cooks. Simmer for 2 1/2 to 3 hours. Add 1 tbsp or 2 of water if the sauce thickens too much while simmering.
5. That's It!! Enjoy with your favorite tortillas and serve with some rice and beans!!
