Mexican Style Quiche - Must Try Original Recipe!!
I'm super excited about this Mexican-Style Quiche recipe!! So I've definitely had a Mexican food craving lately, although I would eat it everyday if I could. Recently, I made White Chicken Chili and since then I've had roasted green chilis on my mind; they seem to be making their way into a few of my recipes. This recipe is no exception! I was originally planning on doing a traditional style quiche when suddenly the idea of a Mexican style quiche with green chilis popped into my mind. I was instantly drawn to the idea (not to mention my mouth started watering). So I came up with this wonderful Mexican style quiche recipe. Ingredients:
1 - frozen pie crust
3 - large eggs
2oz - diced green chilis
2 - heaping tablespoons flour
1/2 - tsp salt
1/4 - white onion chopped
1 - cup half and half
1.5 - cups Mexican style cheese
3 - tbsp green enchilada sauce
1 - diced roma tomato
optional chopped fresh cilantro, salsa, and sour cream for topping
Start by poking holes in frozen pie crust that has been properly thawed. Then place pie crust in an oven that has been preheated to 375° for 10-12 minutes until golden brown.
Sauté onions till translucent and then add green chilis and cook for several minutes.
Once pie crust is browned add a layer of cheese to the bottom of the crust and bake for several minutes to seal the bottom of the crust (this will keep the crust from getting soggy.)
Whisk eggs and half and half, then add sautéed onions and chilis.
Once the pie crust and cheese are done place half of the green enchilada sauce at the bottom of crust and then fill with the remainder of cheese holding back a small amount for topping. Then add half of the tomato.Pour egg mixture over the cheese and tomato. Then add the remainder of the tomato on top of the pie filling. Drizzle the rest of the green enchilada sauce on pie filling.
Bake for 35 minutes. Top with salt and let cool for 5-10 minutes.

Sausage, Cheese & Pepper Crustless Quiche Recipe

Heat 1 TBS oil in a skillet. Add one pound ground sausage and cook until almost done (5-6 minutes)
Add one small diced onion. Cook for 2 minutes. Then add 1/2 diced red pepper, yellow pepper and green pepper. Cook another 2 minutes. Add 1 tsp minced garlic. Cook for 30 seconds.
In a bowl combine:
6 beaten eggs
1/2 cup milk
1/2 tsp garlic powder
1/2 tsp basil
1/4 tsp black pepper
1/4 tsp salt
8 ounces shredded cheese (whatever kind of cheese you like)
Add sausage and pepper mixture to egg mixture. Mix well.
Pour into a well greased 9 inch pie plate. Bake in a preheated 350 degree oven for 40-45 minutes until top is slightly browned.

Betty demonstrates how to make her Mexican Crustless Quiche to go along with her Mexican brunch. This quiche has green chiles for a little heat, and it is superb with some Chocolate Coffee!

Mexican Brunch Crustless Quiche
5 eggs
1/4 cup flour
2 tablespoons butter or margarine, melted and cooled
12 oz. cottage cheese
4 oz. can green chiles, undrained
2 cups (8 oz.) shredded Monterey Jack cheese
cooking oil spray
9 to 10-inch pie plate or 10-inch quiche dish
In a large mixing bowl, beat together 5 eggs, 1/4 cup flour, and 2 tablespoons melted butter or margarine, until thoroughly combined. Stir in 12 oz. cottage cheese, a 4 oz. can of green chiles, undrained, and 2 cups of Monterey Jack cheese. Pour into pie plate or quiche dish that has been sprayed with cooking oil. Bake at 400 degrees for 10 minutes. Reduce the heat to 350 degrees, and cook about 25 minutes longer, until a knife inserted in the center comes out clean. Let stand about 5 minutes, and then cut into pie-shaped wedges. Serve while hot! Muy Bueno!!!

In this video, I am just making a very quick Mexican Quiche, with Mexican Cabbage Salad!
This is a basic to making a quiche the only thing really I’m doing differently is I’m adding a jalapeño and I’m adding cumin spice.
Make sure your hamburger meat is pre-cooked,
In this case I only use a little bit of hamburger meat like a fourth of a pound you can even use less or no meat. You can also use chorizo sausage but remove the casing!
We need:
3 eggs
1/2 Cup of half and half or milk,
A pinch of the following spices:
Salt,
Pepper,
1/2 tsp of Cumin,
1 cup of Cheese,
Mexican cheese. (Used in the Video)
The mix was just some chopper-up mushrooms and one jalapeño diced.
Some onions doesn’t matter if you use green onions or yellow onions or white just some onions chopped up.
The mix should be about a cup in total . You can substitute any of the veggies with corn, zucchini, etc .

Then bake that at a 375 temperature for 30 minutes check it and make sure that it’s not uncooked. If you stick a toothpick in the center it should come out clean.
-MEXICAN CABBAGE SALAD (Ingredients):
A handful of shredded cabbage,
1/4 of a cup of bell peppers,
1/ fourth of a cup of onions,
1/4 cup of mushrooms one jalapeño,
-DRESSING:
A pinch of:
Salt, Pepper, Cumin,
1/2 tsp of garlic,
2 tablespoons of olive oil
3 tablespoons of lime juice or lemon,
You can adjust this dressing if you want more salt or more pepper!

Meat Lovers' Quiche

Yield: 1 (9-inch) quiche; 6 to 8 servings
Ingredients
Half a 14.1-ounce package refrigerated pie crusts
4 slices bacon
1 pound ground country sausage
1/2 cup half-and-half
2 teaspoons Miss Brown’s House Seasoning, recipe follows
6 large eggs, beaten
1/2 cup diced country ham
2 large green onions, chopped
1 cup shredded sharp white Cheddar
Miss Brown's House Seasoning:
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Directions
Special equipment: a quiche pan, pie weights
Preheat the oven to 375 degrees F. Unroll the pie crust and fit into a 9-inch quiche pan or pie plate. Place a piece of parchment paper over the dough and fill with pie weights or dried beans. Bake until the crust is lightly browned, about 10 minutes. Remove the crust from the oven. Remove the parchment and pie weights and return the crust to the oven. Bake until the crust is baked through, about 5 to 7 minutes longer. Set aside to cool.
Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Remove to paper towels to drain. Chop the bacon. Cook the sausage in the same skillet until browned and crumbly, about 7 minutes. Remove the sausage with a slotted spoon, and set aside with the bacon.
Whisk together the half-and-half, Miss Brown’s House Seasoning (recipe follows) and the eggs. Sprinkle the bacon, sausage, ham, green onions and Cheddar evenly on top of precooked crust. Pour the egg mixture on top. Bake until the center is set, 25 to 30 minutes. (Cover the edges with a pie shield or aluminum foil if getting too brown.) Allow to cool slightly before serving.
Miss Brown's House Seasoning:
Yield: Makes about 5 teaspoons
Stir together all ingredients in a small bowl. Store in an airtight container.
