How To make Microwave Cheesecake
1 Crust
1 c Graham Cracker Crumbs
1/4 c Butter, Melted
1 Filling
2 Eggs, Well Beaten
8 oz Cream Cheese, Softened
1/2 c Sugar
1/8 ts Salt
1 t Vanilla
1/8 ts Almond Flavor
1 1/2 c Sour Cream
1 Cinnamon, Garnish
CRUST: Mix crumbs and butter. Press on side and bottom of 9" pie plate. Cook on high for 1-1/2 to 2 minutes. FILLING: In mixing bowl, combine eggs with cream cheese, sugar, salt, vanilla and almond flavoring. Beat until smooth. Stir in sour cream. Micro-cook on low power for 10 minutes, stirring every 2 minutes. Pour into baked crumb crust. Micro-cook cheesecake on low for 3 minutes. Rotate the dish 1/4 turn and continue to cook for 1-3 minutes or until the center is set. Chill for several hours in refrigerator before serving. Serve plain, sprinkled with cinnamon or top with fruit or prepared pie filling of choice. From: Syd's Cookbook.

For the base:
• Digestive Biscuits - 160 gms
• Melted butter - 80gms/ ⅓ cup
For the Filling:

For slurry:
• Warm milk - 6tbsp

For Strawberry Sauce:
• Strawberries (halved) - 1cup
• Sugar - ¼ cup
• Water - a dash
Accompaniments:
• Whipped cream
• Mint sprigs
Note:
The recipe needs a silicon mold that can go in a microwave.
Microwave it at 800w for 10mins.
Method:
• To make the cookie crumb base crush the biscuits with your hands then add them to the grinder.
• Once they turn into a fine crumb add in melted butter and mix them.
• Spread it onto a silicon mold (8inch dia and 2inch in height).
• Press down the crumbs using the flat base of a cup to tightly pack it. Refrigerate for at least 30mins before use.
• For the filling mix together hung curd, condensed milk, cream, and vanilla extract.
• Separately mix together warm milk with cornstarch and add to the filling.
• Mix well so there are no lumps.
• Pour this mixture onto the cookie crumb.
• Place the silicone mold onto a microwave-safe plate and place it inside the microwave.
• Choose the option microwave, take the intensity to 800-900watts and cook for 10mins. Alternatively, if your microwave has a power option from low to high then choose medium power and cook for 10mins.
• Remove from the oven and allow it to cool completely.
• Place it in the fridge for at least 2 hours (overnight is preferred) and then remove the cake from the mold.
• To make the strawberry sauce place the strawberries along with sugar and a dash of water in a pan and cover and cook for approx 8 mins. Remove from heat and let it cool.
• Cut slices from the cheesecake and pipe some whipped cream on top.
• Pour the strawberry sauce on top and garnish with mint sprigs. Serve chilled.

5-Minute Microwave Cheesecake
Servings: 1
INGREDIENTS
1 tablespoon butter
2 graham cracker sheets
4 ounces cream cheese, softened
2 tablespoons sugar
3-4 drops vanilla extract
Raspberries, to serve
PREPARATION
1. Melt the butter in a small microwaveable mug or dish. Grease a ramekin with the melted butter.
2. Crush the graham crackers into fine crumbs, then mix it with the remaining butter. With a spoon, press the crust flat against the sides of the dish.
3. In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps. Transfer the mixture on top of the cracker crust, then spread it evenly on top.
4. Microwave for at least 4 minutes, 30-45 seconds at a time at 50% power. Make sure the cheesecake does not bubble over the sides.
5. Chill in the freezer for at least 30 minutes, until it is completely cool to the touch.
6. With a knife, loosen the edges of the cheesecake then invert onto a plate, or eat straight from the dish.
7. Top with a few raspberries, and enjoy!
