How To make Mix In Pan Carrot Cake
CAKE:
1 1/2 c All purpose flour
1 c Sugar
1 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
1 ts Cinnamon
1/2 ts Allspice
1 c Shredded carrots
1/2 c Chopped pecans or walnuts
3/4 c Water
1/3 c Oil
1 tb Lemon juice
1 ts Vanilla
1 Egg
CREAM CHEESE FROSTING:
4 oz Cream cheese softened.
1 1/2 c Powdered sugar
1/4 c Butter softened
1/2 ts Vanilla
Heat oven to 350, 325 for glass pan. Lightly spoon flour into measuring cup; level off. In ungreased 8 inch square pan combine flour, sugar, baking powder, baking soda, salt cinnamon and allspice; mix with fork until blended. Add carrots and nuts, stir until well blended. In small bowl, combine water, oil, lemon juice, vanilla and egg, blend well. Pour over dry ingredients; stir with fork until well blended. With rubber spatula, scrape corners, sides and bottom of pan to moisten all ingredients. Bake 350 (325 for glass) 40 - 60 minutes or until toothpick inserted in center comes out clean. Remove from oven, cool completely on wire rack. CREAM CHEESE FROSTING Mix all ingredients until completely combined. Frost cooled cake. Then refrigerate. Amazing Carrot Cake Recipe
My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!

The Easiest CARROT CAKE RECIPE using a Blender!
Incredibly moist and easy carrot cake recipe !

Easy & Moist Carrot Cake :
115g Carrots, cut into chunks (1 and a half medium carrots)
100g any unflavored Oil (3.5 ounces or 1/2 cup)
1 egg
120g Milk (1/2 cup)
100g Brown Sugar ( 1/2 cup)
150g All Purpose Flour ( 1 cup + 1 tbsp)
1/4 tsp salt
1 tsp cinnamon
1 tsp vanilla
3/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp vinegar
Bake at 160C or 320F for around 24-25 minutes. Do the toothpick test and don't over bake.
For the cream cheese frosting:
- 150g Cold Philadelphia Cream Cheese ( 2/3 cups or 5.5 ounces Cream Cheese)
- 60g Powdered Sugar ( 1/2 cup, or add to your liking)
- 1 tsp Vanilla ( optional)

You like carrots or not you will like this carrot cake. It's soft and moist, you don't really taste carrot in it. The orange flavour goes very well with it, This is my own recipe and this is how I like my carrot cake. but if you want to use vanilla, cinnamon, or almond you certainly can. Although I strongly recommend that you try the way it is.
