Better Than Your Mom's Chili - Homemade Chili - E016

Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ancho chili powder
- 1/2 teaspoon cayenne pepper
- 2 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon cocoa powder
- 1 (15-ounce) can kidney beans, rinsed and drained
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 (15-ounce) can fire roasted tomatoes
- 1 (15 ounce) can crushed tomato
- 4 cup vegetable stock
Instructions:
- In a large pot, brown the ground beef over medium heat. Drain off any excess grease.
- Add the onion, bell pepper, jalapeño pepper (if using), and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
- Stir in the chili powder, cumin, oregano, salt, and black pepper. Cook for 1 minute more.
- Add the kidney beans, pinto beans, diced tomatoes, crushed tomato, and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chili has thickened.
- Serve hot with your favorite toppings, such as shredded cheese, sour cream, or chopped fresh cilantro.
Tips:
- For a spicier chili, add more jalapeño pepper or more cayenne pepper.
- For a thicker chili, mash some of the beans against the side of the pot with a fork.
- For a vegetarian chili, omit the ground beef and add an extra can of beans.

Instant Pot Chili Recipe:
2 pounds ground meat
1 small onion diced
1 tablespoon minced garlic
1/2 cup beer
1 cup beef stock
1 tablespoon Chili Seasoning Blend
4 cups cooked kidney beans 2 (15 ounce) cans rinsed and drained
28 ounces crushed tomatoes
1 teaspoon Worcestershire sauce
Directions:
Turn your instant pot to the saute function and allow it to heat up until it reads Hot
Brown the ground meat with the diced onions, until just browned through--about 5 minutes.
Add in minced garlic and saute for another minute or two.
Turn Instant Pot Off.
Drain off any excess grease and return inner pot to pressure cooker.
Add in your beer and stock and scrape up the browned bits off the inner pot.
Add in chili seasoning, beans, crushed tomatoes, and stir well.
Place lid on instant pot with valve closed to sealing.
Cook on high pressure for 15 minutes.
Let pressure release naturally--about 15-20 minutes. Remove lid and stir In Worcestershire sauce.
Chili Seasoning Recipe:
1 Tbsp chili powder
1 tsp cumin
¼ tsp cayenne pepper
¼ tsp garlic powder
½ tsp onion powder
1 tsp salt
½ tsp pepper
Stir to combine and use as recipe calls for.
