Quarantine Cooking #22: Delicious!Chinese style stewed lamb daikon soup & Stir fry baby cabbage 清炖羊肉
This is one of my favourite soups.
My mom’s version always comes with a handful of lightly Sichuan peppercorn and dry chilli pepper. This is to add a little heat to balance the cooling effect daikon possess. My mom making the lamb daikon soup mostly every two days, especially in winter. I love every time after school, opened the door, the warm, delicious soup already waiting for me. Oh yes, I was being spoiled till I moved to Canada alone. Lol
Chongqing, my hometown. You might not know yet, but you must know Hot pot, the region known for its love of spice. It is located on the Yungui plateau and surrounded by small mountains.
This is the biggest inland city in China and was the capital of the country from the late 1930s to the early 1940s. If you want to live in Chongqing, I suggest you can accept spicy food. Why? Because 99% of dishes there are super spicy!
Locals will tell you that the reason we eat such punishingly spicy food is because of the climate. Chongqing’s winter is cold and damp, quite humid. There's a saying that the food we eat helps draw out extra moisture from the body. And that actually works.
Daikon will turn to mild and sweet when it cooked. In Chinese cuisine, the daikon is used in so many ways: pickled, fried, simmered, stewed, grated, mashed and shredded. In China, it’s most popular use is in soups, braised for hours with beef, lamb or pork ribs. It helps in cleansing and detoxifying our digestive system, said my mom every time I have this soup at home.

THE RECIPE
Ingredients
1 Lemon
¾ cup Catsup
¾ cup Water
½ cup chopped Onion
2 T Brown Sugar
3 T Worcestershire
1 T white Vinegar
¾ tsp Salt
Dash of Tabasco Sauce
Cook in pan till all flavors marry. Then combine with ribs and bbq brushing with left over sauce.

Ingredients:-
200 Gram Onion
Salt According to taste
2 Table spoon Ginger Garlic Paste
2 Cinnamon
4 Cloves
4-5 Cardamom
Red Chilli Powder according to taste
1 Pinch Turmeric
50 Ml Oil
2 Spoon Shan Paya Masala
2 Spoon Home Made Paya Masala
3 Glass Water
2 Spoon Wheat Flour
2 Tablespoon chopped Coriander
2 Spoon Yogurt
3 Table Spoon Cooking Cream

MY MOTHER-IN-LAWS DURBAN STYLE LAMB CURRY
A visit to DURBAN is not complete unless you have an authentic Durban style lamb curry. This meal is a staple in most South African homes and todays recipe has been passed down to my mother-in-law by her mother. A true DURBAN style Indian curry.

Cooking Time : 50 Mins
Total Time: 1 Hour
Servings : 6 - 8 People
INGREDIENTS
• 1.5 KG Lamb
• 1 Whole Onion
• 3 Tomatoes liquidised
• 3 Medium-Large Potatoes
• 1/2 Cup Oil
• Curry Leaves
• 1 TBSPN Ginger & Garlic Paste
• 3 Chillies Sliced
• 1 TSPN Whole Breyani Mix Spice
• 1 Bay Leaf
• 1/2 TSPN Tumeric
• 1 TSPN Dhania & Jeera Powder
• 2 TSPN Garam Masala
• 5 TBSPN Kashmiri Special Mix Masala
• Rough Salt
• 1/2-1 Cup Hot Water
• Coriander
METHOD
1. Add oil to a medium heated pot.
2. Add in onions & mix.
3. Add in whole breyani spices, bay leaf, chillies, curry leaves & ginger & garlic paste and mix until everything is coated well.
4. Add in tumeric, dhania & jeera spice and garam masala and stir until everything is mixed into the oil.
5. Add in kashmiri masala and mix well.
6. Add in tomatoes & mix well for 2 mins and allow to simmer for about 5-7 mins.
7. Add in lamb and mix well until all the meat is coated and allow to simmer for 20 mins. Stir occasionally every 5-7 mins.
8. Add in 1/2 cup of hot water and mix well and allo to simmer for 5 mins.
9. Place the potatoes around around the meat and allow to simmer in the gravy until cooked.
10. Garnish with coriander and serve.
SERVING OPTIONS
You can serve this curry with the following: Rice, Bread, Roti Or Naan.
