How To make Moroccan Brisket with Olives
6 lb Brisket of beef
-Lamb can be substituted 2 cl Garlic, peeled and halved
1/4 c Olive oil
1/4 ts Tumeric
-OR Saffron, a few strands 1 ts Ginger, fresh grated
2 lg Spanish onions, diced
4 tb Celery, chopped, with leaves
1 sm Carrot, peeled, sliced in
-paper thin rounds 1 lb Green olives
2 lg Tomatoes, peeled and diced
-OR 16 oz Stewed tomatoes, canned
1 Lemon, for juice
Sprinkle meat with salt and pepper; rub with garlic. In a heavy roasting pan, sear meat on all sides in a bit of olive oil. Remove and set aside. In same pot, add remaining olive oil, tumeric (or saffron), ginger, and onions. Saute until onions are limp. Add celery and carrots. Saute a bit more. Add tomatoes and mix. Remove 1/3 of the mixture and placed seared meat on the remainder. Cover with the rest of the mixture. Cover, and bake in pr-heated over at 350 degrees F untill meat is tender about 3 hours). Remove, and refrigerate. In the meantime, pit the olives. Place olives in a pot. Cover with water and bring to a boil. Drain, and repeat the process. (to remove saltiness of the olives). Remove brisket from refrigetator. Remove any fat that may have collected. Slice the meat agains the grain. Return meat to a heavy pot with the mixture. Sprinkle the olives over the meat. Reheat at 350 deg F for 1/2 hour, and serve.

Seasoning Recipes:
Tagine Spice
4 tbsp ginger powder
2 tbsp black pepper powder
3 tbsp turmeric powder
1 tbsp garlic powder
1 tbsp coriander powder
1/2 tbsp cinnamon powder
1 tsp harrisa pepper powder
Directions
Mix all the spices in a bowl. Make sure the bowl is perfectly dry, otherwise, your spice mix can mold. Store in an airtight container.
Harissa Spice
10 dried, smoked chile peppers
2 T cumin seeds
2 T coriander seeds
2 T caraway seeds
½ t multi-colored whole peppercorns
2 T smoked paprika
½ T garlic powder
1 t sea salt
1 t dried parsley
1 t dried oregano
Directions
Remove and discard stems and seeds from dried chiles. Slice chiles in half or quarters, if they are large. Heat a skillet over medium-low heat. Add chiles and heat through to ensure all the moisture has evaporated. Remove and place on a rack to cool. Place cumin seeds, coriander seeds, caraway seeds, and peppercorns in the skillet. Stir seeds and toast until fragrant, about 2-3 minutes. Remove and allow to cool. Grind chiles and toasted seeds with a mortar and pestle into a coarse powder. Add smoked paprika, garlic powder, smoked salt, parsley, and oregano. Continue to blend until all spices are completely combined and pulverized.

Beef & Moroccan Seasoning -
2 Tbsp (30ml) - Olive Oil
1.5kg (3.3lbs) - Beef Bolar Roast
1 tsp (2g) - Ground Cumin
1 tsp (2g) - Ground Ginger
1/2 tsp (1.5g) - Ground Coriander
1/2 tsp (1.5g) - Ground Cinnamon
1/2 tsp (1.5g) - Cayenne Pepper (Optional)
1/2 tsp (1.5g) - Ground Allspice
1/4 tsp (0.5g) - Ground Cloves
Sauce & Serving -
1 - Brown (Yellow) Onion, Large Diced
4 - Garlic Cloves, Crushed
1 - Bunch Coriander (Cilantro), Leaves & Stems Separated From Roots, Roots Roughly Chopped
1 1/2 Tbsp (35g) - Harissa Paste (This is an easy to get item)
1 Tbsp (7g) - Ground Cumin
1 Can (400g-14.1oz) - Diced Tomato
1 Litre (4 Cups) - Beef Stock -

Hi everyone! In this video, I'm going to show you how to make an easy and the most delicious slow-cooked Mediterranean style beef stew with meltingly tender beef cubes, fresh vegetables and herbs.
BEEF STEW INGREDIENTS:
1.1lbs/500gr - Beef chuck (cut into cubes)
1 onion (roughly chopped)
2 garlic cloves (roughly chopped)
10.5oz/300gr - canned chopped tomatoes
3 cups - beef stock
2 medium carrots (sliced into half moons)
2 bell peppers (roughly chopped)
1/2 bunch parsley (roughly chopped)
1/2 cup olives (pitted)
2 tbsp olive oil
salt and pepper to taste
