How To make Noodles with Ricotta& Walnuts
10 oz Whole wheat pasta
Salt 1 c Ricotta cheese
- at room temperature 4 tb Soft butter
1 tb Walnut oil
1/3 c Walnuts, finely chopped
1/2 c Fresh garted Parmesan cheese
Parmesan cheese for garnish 1 c Half-and-half
-??Milk or Pasta Water 1 tb Snipped chives
1 tb Finely chopped chervil
-??Parsley Freshly ground pepper
brING LARGE PAN OF WATER to boil for pasta and add salt to taste. If pasta is dried, add it at this time. If it's fresh, wait until you've put together sauce ingredients. Have ready heated serving bowl or plates. Roughly mix ricotta cheese, butter, walnut oil, 1/4 cup walnuts and grated Parmesan cheese. Thin with half-and-half, stir in herbs and season with salt and pepper. Transfer mixture to wide skillet. About the time pasta is done, gently warm sauce over low flame. Cook and drain pasta and add it directly to pan with ricotta mixture. Toss everything together well, then place in heated bowl. Cheesy Caramelised Onion & Pine Nut Pasta | Waitrose & Partners

Homemade Pesto Ravioli with Ricotta???????????? #shorts
3 Cheese Pesto Ravioli ????Putting my pasta machine to work! So I’ve made ravioli stuffed with ricotta, topped with Burrata + Parmesan cheese!! ????
Ingredients:
????Pasta dough
- 1 cup AP flour
- 1/2 cup semolina flour
- 1 egg
- 3 tbsp water
????Pesto
- Basil (3 handful)
- Garlic 2 cloves
- Parmesan cheese 1/4 cup
- Pine nuts 1/4 cup
- EVOO 1/4 cup
- Salt (a pinch)
- Black pepper 1 tsp
Others:
- Ricotta (1 cup), dried parsley and salt (filling)
- Burrata (fresh mozzarella filled with mozzarella cream) it’s so delicious ????
Instructions:
1. Combine all pasta dough ingredients and knead until you get a smooth dough.
2. Shape it into a ball and place in a covered bowl to prevent drying. Let it rest for 30 mins.
3. Meanwhile, let’s make the pesto. Pick, wash and dry the basil leaves.
4. Lightly, toast pine nuts in a pan on low-med heat for 2-3 mins. Then let it cool.
5. In a blender, add in the basils, pine nuts, Parmesan cheese, garlic, salt, pepper and EVOO. Blitz it up until you get a smooth sauce.
6. Now, let’s prep the ricotta for the ravioli filling. Add ricotta in a bowl and soak up the excess liquid with a paper towel.
7. Mix in dried parsley and a pinch of salt.
8. Take the pasta dough out and knead it a few times.
9. Sprinkle flour on your working surface and in your pasta machine to prevent sticking.
10. Slowly feed in your dough into the pasta machine started at setting “0”. Remember to dust flour on your dough every time.
11. Repeat this again for each setting up to “6”
12. You should now have one long sheet of pasta. Take a Bench scraper and cut off the uneven ends. Then cut 18 in sheets of dough.
13. On one sheet pipe or spoon on your ricotta filling 1 in apart from each other. You don’t need a lot, just a 1/2 inch in diameter of filling is good. Otherwise, it’ll over fill.
14. With your finger, lightly dab a little bit of water around the edges of the sheet. This will help the dough stick to each other when placed on top.
15. Place a dough sheet on top, push the air out with your fingers and seal the edges.
16. Boil a pot of water and salt it generously. Place the raviolis it and fish them up when they start to float.
17. In another pan, pour your pesto in and mix on med-low heat.
18. Add in the ravioli and mix.
19. Serve with burrata, roasted pine nuts, black pepper and grated Parmesan cheese! Enjoy!
