Happy New Year, everybody! Kickin' it off right with some smoked brisket chili! No recipe in the description... just gonna have to watch the video to get an idea of how it's made. Whatever the case, it's chili... pretty straightforward.

Cantonese Ribs with Black Bean Sauce Recipe (Dim Sum Style)

Steam Ribs in Black Bean Sauce (豉汁蒸排骨) is the most popular rib recipe in Cantonese cuisines. By sauteing part of the garlic and the fermented black soybean, the flavor really stands out. The citrus aroma from the orange peel is like a nice little spark that refreshes everything. These ribs are incredibly tender, juicy, and full of umami flavor.
INGREDIENTS (Served 2)
500 of pork short ribs
2 tsp of salt to rub the ribs (Amazon Link -
1/4 cup of cornstarch to rub the ribs (Amazon Link -
1/4 cup of crushed ice to rub the ribs
3 tbsp of Chinese cooking wine to rub the ribs (Amazon Link -
1.5 tbsp of soy sauce (Amazon Link -
1 tbsp of oyster sauce (Amazon Link -
1/2 tbsp of Chinese cooking wine (Amazon Link -
1/4 tsp of salt (Amazon Link -
1/3 tsp of baking soda (Amazon Link -
1/2 tsp of sugar (Amazon Link -
1/3 tsp of white pepper (Amazon Link -
1/3 tsp of aged tangerine peel, optional (if you don’t have it, use 1 tsp of orange zest.) (Product Link -
3 tbsp of garlic
3 tsp of ginger
2 tbsp of cornstarch (Amazon Link -
2 tsp of fermented black bean, roughly diced (Amazon Link -
2 tbsp of vegetable oil (Amazon Link -
INGREDIENTS
Slice the ribs in between the bones into bite-size pieces. Then rub with salt, corn starch, crushed ice and Chinese cooking wine for 8 minutes. This 8 minutes of rubbing is going to loosen up the grains and fibers, which tenderize the ribs physically - very important.
Rinse the ribs under cold running water for a few minutes or until all the starch is gone Then drain completely. This cleaning process will remove any unpleasant smell and wash off some of the Myoglobin, which is the redness that appears on the meat. If you don’t wash it, you will get a meaty, gamy taste and your ribs will be brown after cooking. This is completely optional and up to you but I as a Cantonese, we prefer our meat to have a light color and a clean taste especially when making steamed recipes.
In a mixing bowl, combine the marinading ingredients for the ribs: soy sauce, oyster sauce, chinese cooking wine, salt, baking soda, sugar, white pepper, granulated orange peel, 2 tbsp of minced garlic (reserve 1 tbsp for later), and 2 tsp of the minced ginger (reserve 1 tsp for later).
Even though the ribs are well-drained, it is still wet. Use paper towels to absorb as much water as possible then mix the ribs with the marinade.
Once all the flavor is well combined, add 2 tbsp of cornstarch and mix thoroughly. This will get you that classic dim sum rib texture. Set the ribs aside for now.
In a sauce pot, add the black soybean, the reserved garlic and ginger, and 2 tbsp of oil. Saute for a couple of minutes or until the aromatics are slightly golden on the edge. Turn off the heat. Let it cool.
Pour the aromatics and oil into the ribs and stir thoroughly. Let is sit in the fridge for at least 1 hour (over night will be even better).
Place the ribs in the plate and steam on high heat for 30 minutes. Make sure you have enough water in the pot so it doesn’t boil to dry.
Sprinkle some diced scallion as garnish. Enjoy
Unbelievable! Chili Mac Southwest Skillet Recipe
This is just one take on a group of recipes that go by many names: Beefaroni, Chili Mac, American Goulash, American Chop Suey, Southwest Skillet... Hamburger Helper. All of these recipe have three things in common: Ground beef, macaroni, and tomatoes; from that starting point you can add ingredients and spices to make it whatever you want.
This time we chose to use our Taco Seasoning Spice mix to make a cheesy Chili Mac!
Ingredients:
2 cup (250g) dry elbow macaroni
1 large yellow onion
1-2 medium bell pepper
1-2 jalapeno
2 to 3 cloves garlic (optional)
1 pound (500g) ground beef
2-3 Tbsp (30-45 mL) our taco spice
1 28-ounce (796 mL) can diced tomatoes
1 cup (250 mL) beef stock
1 cup (250 mL) shredded cheddar cheese
Salt and pepper to taste
Method:
Put the macaroni in a bowl and cover with boiling water.
Let the macaroni sit in the hot water while you chop up the veg and brown the beef - 10-15 minutes.
Prep the onion, peppers and garlic - chop or dice as fine or rough as you want.
Sauté the ground beef until browned.
Transfer to a plate.
Remove any excess fat, leaving behind just enough to coat the pan.
Cook the onions, and peppers in the pan with the salt until they are soft, and just beginning to brown.
Stir in the garlic, and taco spice, and cook until the garlic is fragrant.
Add the hamburger back to the pan.
Pour tomatoes with the juice into the pan along with the the macaroni.
Add beef stock and bring to a rapid simmer, cover and simmer until the liquid has reduced and the pasta is cooked.
Adjust seasoning with salt, pepper, or more spices.
Spread on the cheese until melted.
Serve with nacho chips and sour cream.
Serves 4 to 6

Le fajitas sono uno dei piatti più famosi della cucina tex-mex: morbide tortillas che avvolgono un ripieno saporito di carne di pollo e manzo, peperoni e cipolle. Le fajitas sono una ricetta molto antica, ma è solo negli anni ’70 che la ricetta viene arricchita con altri ingredienti e le fajitas hanno assunto la forma che oggi tutti conosciamo!

Texas Red Chili - Bowl of Red
Texas Red Chili - AKA Bowl of Red - AKA Chili Con Carne
The timeframe and origins of chili are debatable such as many things in history. Did it start in the US or did it come from Spain?
In 17th century there is an old Southwestern Native American legend that a chili recipe was put on paper by a beautiful nun, Sister Mary of Agreda of Spain.
In the 18th century there are records in San Fernando de Bar, now know as the city of San Antonio, of a spicy “Spanish” stew that is similar to chili.
In the 19th century things became more clear. Chili was cooked on chuckwagons where Cowboy cooks didn't carry perishable items, it was made popular in Tex prisons, it went national when Texas sets up a stand at the1893 Columbian Exposition in Chicago.
My favorite account is the women of San Antonio known as the “Chili Queens” selling this they called chili that was makde with dried chilis and beef in the Military Plaza Mercado. From the July 1927 issue of Frontier Times. In this article, Frank H. Bushick, San Antonio Commissioner of Taxation, The chili stand and chili queens are peculiarities, or unique institutions, of the Alamo City. They started away back there when the Spanish army camped on the plaza. They were started to feed the soldiers. Every class of people in every station of life patronized them in the old days. Some were attracted by the novelty of it, some by the cheapness. A big plate of chili and beans, with a tortilla on the side, cost a dime.
One thing that is not debatable is the original chili started off as Chili Con Carne (chili with meat) and it started off in the Southwest. Chili was about the meat and the flavors from the chilis. There were no fillers such as beans, noodles or rice.
State Dish of Texas - 1977 - RESOLVED by the House of Representatives of the State of Texas, the Senate concurring, That the 65th Legislature in recognition of the fact that the only real bowl of red is that prepared by Texans, hereby proclaims chili as the State Dish of Texas.
