Complete recipe:
Ingredients
2 apples
2 tbsp toasted almonds, chopped
2 tbsp toasted dry coconut, chopped
2 tbsp raisins
2 tbsp rolled oats
3 tbsp whole wheat flour
2 tbsp unsalted butter
1 tsp cinnamon powder
1/2 cup apple cider
1 tsp vanilla extract
1 tbsp lemon juice
2 tbsp jaggery powder
1 cinnamon stick
Preparation
1. Peel a 1/2 inch band of skin around the top of the apple and sprinkle lemon juice.
2. Preheat the oven to 200° C.
3. Place the raisins on the bottom of the baking dish and place apples on the top.
4. In a large pan, add the jaggery, toasted almonds, coconut, flour, oats, butter, cinnamon stick and mix well.
5. Fill each apple with the filling.
6. In a saucepan, add apple cider, some water, cinnamon powder and vanilla essence and bring to boil.
7..Bake the apples for about 30 minutes, until it is soft.
8. Transfer the apples to a platter, add the raisins to the sauce and reduce over high heat until it is slightly thick.
9. Pour the sauce over the apples.
10. Serve once slightly cool.
