How To make Ok Corral Salad
4 c Cooked Pasta wheels
Raw Carrot * Med onion, chopped Rib Celery, sliced thin 1/2 x Green pepper, chopped
5 x Radishes, sliced thin
6 1/2 oz Can drained Tuna, water pack
3/4 c Dressing (see recipe)
* Scrubbed and sliced into thin matchsticks. This pasta salad gets its name from the shape of the pasta, but you could just as easily use shells and rename it Seashell Salad, etc. Toss all the ingredients in a large salad bowl and chill. The salad can be made the night before and refrigerated. If you want to take it easy, just slice all the veggies with a food processor. BASIC DRESSING 1 c extra-virgin olive oil 2 t

Ingredients:
500g Macro free range chicken tenderloins, about 10
1 teaspoon Woolworths Select ground paprika
1 teaspoon Woolworths Select ground coriander
2 tablespoons Woolworths Select vegetable oil
10 Woolworths Select white tortillas
1 avocado, diced
300g jar Woolworths Select chunky mild salsa
Woolworths sour cream and lime wedges, to serve
Crunchy salad
1 granny smith apple
3 medium radishes
1 tablespoon lime juice
2 cups shredded sweet crunch lettuce
¼ cup chopped fresh chives
50g snow pea sprouts, chopped
2 teaspoons Woolworths Select vegetable oil
Method:
1. Combine chicken, spices and 1 tablespoon of the oil in a large bowl. Season. Toss to coat. Heat remaining oil in a large frying pan over a medium to high heat. Add chicken in two batches. Cook for about 2 to 3 minutes on each side, or until golden and cooked. Drain on absorbent kitchen paper.
2. For crunchy salad, cut unpeeled apple and radishes into thin rounds and then into matchsticks. Place in a large bowl with juice. Toss to coat. Add remaining ingredients. Toss to combine.
3. Heat tortillas according to packet instructions. Serve with bowls of chicken, salad, avocado, salsa and sour cream and fill to your liking.
Tip 1: To prepare tortillas, wrap in foil and heat in 160C oven for 10 minutes.
Tip 2: Woolworths Select traditional white corn tortillas are a great gluten free option. Tortillas also make great bases for pizzas.
Tip 3: For fish tacos replace the chicken tenderloins with flathead or ling.
