How To make Onion Buns
2 1/2 c Soy milk
3 tb Dairy free margarine
1 tb Prepared yellow mustard
2 tb Dried minced onion
2 1/4 oz Active dry yeast
2 tb Sugar
6 c Unbleached white flour
1/2 c Wheatgerm
2 ts Salt
1/2 ts Black pepper
1/4 ts Turmeric
Heat soymilk with margarine, mustard, and dry onion until warm to touch (not scalding). Let cool to 120-130 degrees F.
Mix undissolved yeast with sugar, 2 cups flour, salt, pepper and turmeric in a large bowl. Beat in seasoned soymilk; mix well. Stir in wheat germ, then add remaining flour one cup at a time, mixing each cup in until well-mixed. When you have a soft ball, turn out onto a floured surface and knead for about 5 minutes until dough is smooth and elastic. Place in a greased bowl, turning to coat dough. Cover and let rise in a warm place until doubled, about 1 1/2 hours.
Punch dough down and divide into 16 equal pieces. Shape into burger buns or hot dog buns, placing on cookie sheets that have been sprayed with non-stick spray. Brush lightly with vegetable oil. Cover with saran wrap. Allow to rise about 45 minutes. Bake in a 350 degree oven about 20 minutes, until golden brown. Cool on wire racks. Recipe by Shirley Wilkes-Johnson

These soft, pillowy buns are filled with sweet, mellow salad onions as well as cream cheese and marmite. The marmite isn’t at all overpowering and really helps with a subtle umami flavour. These buns can be enjoyed hot or cold and are perfect to pop into a picnic.

Ingredients:
400g strong white bread flour, plus extra for rolling
10g fast-action dried yeast
1 tbsp caster sugar
1 tsp fine salt
200ml milk, lukewarm
1 British Blacktail Free Range Large Egg, beaten
50g unsalted butter, softened, plus extra for greasing

120g soft cheese
1 tsp Marmite
1 bunch salad onions
90g French Comté AOP

Servings - 3 - 4
INGREDIENTS
Warm milk - 250 milliliters
Sugar - 2 tablespoons
Yeast - 1 tablespoon
Wheat flour - 310 grams
All purpose flour - 155 grams
Salt - 1/2 teaspoon
Baking powder - 1/2 teaspoon
Oil - 2 tablespoons
Onions - 100 grams
Garlic - 1 tablespoon
Cumin seeds - 2 teaspoons
Coriander - 1 tablespoon
Green chili - 1 teaspoon
Milk - 50 milliliters
Oil - 1 tablespoon
Milk - for brushing
Onion slices - to taste
Coriander - to taste
Red chili - to taste
PREPARATION
1. In a mixing bowl, add 250 milliliters warm milk, 2 tablespoons sugar, 1 tablespoon yeast and mix it well.
2. Rest the mixture for 10 minutes.
3. Add 310 grams wheat flour, 155 grams all purpose flour, 1/2 teaspoon salt, 1/2 teaspoon baking powder, 2 tablespoons oil, 100 grams onions, 1 tablespoon garlic, 2 teaspoons cumin seeds, 1 tablespoon coriander, 1 teaspoon green chili and mix it well.
4. Add 50 milliliters milk and knead it into a smooth soft dough.
5. Then, add 1 tablespoon oil and tuck the dough well.
6. Rest the dough for 1 hour.
7. Roll the dough and divide it into equal portions.
8. Take a portion and roll it into a ball.
9. Cover it with cloth and rest for 30 minutes.
10. Brush it with milk, garnish with onion slices and red chili.
11. Preheat the oven to 4000°F/200 °C. Bake for 20 minutes.
12. Serve.

Ingredients:
1 + 1/2 cups warm water (350ml).
1 tbsp dry or instant yeast (7g).
1 tsp salt + 1 tsp sugar.
4 cups flour (480g).
Bake at 190° (375°F) for 20 minutes.
Divide the dough into 8 equal portions. Take one piece and form a ball. Place on parchment paper-lined baking sheet with flour. Spraying water on buns. Let the dough rest at room temperature for 20 minutes. Use a sharp knife to cut a slit across the top of the buns. Bake at 190° (375°F) for 20 minutes.

Ingredients:
1 cup of lukewarm milk
2 tsp yeast
2 tbs of sugar
1 tsp salt
3 eggs
1/4 cup of melted butter
4 cups of white all- purpose flour 600 grams
2 medium onions
2 tbs of oil
1/4 cup of grated cheese
Instructions:
Mix your sugar and warm milk and sprinkle yeast over the mixture. Let stand for 5 minutes.
To your stand mixer add flour, salt, eggs and your yeast mixture and mix for 30 seconds. Add melted butter and mix with a dough hook until the dough gets smooth and elastic.
Form a ball of dough, spray with a non- stick spray, cover with a tea towel and
let it rise until it doubles in size.
Chop your onion and fry on two tbs of oil with pinch of salt until soft and golden colour. Let it cool.
Line a baking sheet with a parchment paper.
Punch down your risen dough and roll to 1 cm thick. Cut 3 inch circles. With your finger or a shot glass make hole in the middle and put onion filling in.
Arrange on your baking sheet, leaving them space to rise some more.
When you done with all your dough brush them with a lightly beaten egg. You can top them with some treated cheese.
Bake in preheated oven to 180 degrees celsius for about 15 min or until they turn nice golden brown colour.
