Here am preparing with Sundakkai instead of this use can replace with Small Onion (Shallots) / Brinjal (kathirikai) / Drumstick (murungakkai) / Vendakkai (lady finger).

Vatha Kuzhambu / Vatha Kulambu is a popular south Indian gravy and is one of the traditional recipe in Tambram kitchen.
Shallots (chinna vengayam or sambar vengayam) cooked in tangy and spicy tamarind gravy is a wonderful mix for hot steamed rice. Vatha Kuzhambu is one the traditional recipe in Tambram kitchen.
The addition of shallots adds a unique tangy taste to the Vathal Kulambu and makes it much delicious. Shallots are always a healthy veggie which also adds a rich flavor to any recipe.
Tamarind extract(puli) is slowly simmered over a low flame and in the mean time the gravy extracts the flavors from the added shallots. Thus we end up with a concentrated tasty gravy for our rice.
Manathakali vathal, Sundakkai vathal, Yellow Pumpkin, Lady's finger, Brinjal, papad, Orange peal etc. are some of the most common things we add in vatha kuzhambu. Each of these ingredients will add a unique taste to the kulambu.
