Panzerotti is a Fried Pizza and the most popular Italian Street Food from Puglia, which we would like to introduce to you in this “Street Food Berlin Germany” Episode. What's more, it's from one of the Fastest Italian Street Food Bakers, who sells fresh Panzarotti on a Bicycle with a trailer at many Markets in Berlin. Panzerotti from Bari in Puglia are a type of Mini Pizza Calzone, which are not traditionally prepared in the oven, but are fried in Hot Oil.
Nicola's Panzarottis are homemade with Love and Passion, and his self-built Mercurio Street Food Bicycle Trailer are not only an enrichment for the Berlin Street Food Scene but for all Pizza Fans. Because Panzarotto is the Pizza-To-Go and the ideal Soul Food for every occasion.
[1] The Dough needs 12 Hours of Resting-Time
The Water Hydration Rate of Panzarotti is 60%, similar to Neapolitan Pizza. The exact composition of the Dough and Fillings vary from Region to Region. But Fluffy Dough on the Inside, Baked Crispy on the Outside, filled with Tomato and Mozzarella: these are perfect Panzerotti.

Taleggio is a northern Italian soft Cheese with a protected designation of origin. It has 48 percent Fat in dry matter. The taste is intensely Strong and very Spicy.

'Nduja is a sausage from Calabria and is therefore also called Nduja calabrese. 'Nduja is a very spicy, soft, Italian Raw Sausage. It consists of pork (especially shoulder and belly) and is refined with numerous spices. Chilli or Italian peperoncini in particular play an important role in seasoning. It was originally made in the southern Calabrian town of Spilinga and the surrounding area.
