Chicken Fricassee - quick French Chicken Stew
Chicken Fricassée is a traditional French chicken stew made with browned chicken pieces braised in a creamy white mushroom sauce. A rustic family style meal that's easy enough for midweek, it's almost like the white sauce version of Coq au Vin - except it's so much faster to make!

Baked Chicken Casserole, Simpol!
This is a perfect party dish! It requires a bit of preparation but everyone will surely enjoy this creamy and delicious chicken casserole!
INGREDIENTS:
Set A:
1 whole chicken, halved
1 kilogram potatoes, peeled
1 piece large carrot, peeled
6 cups water
2 teaspoons salt
Set B:
1/2 cup butter
4 cloves garlic, minced
1 piece onion, minced
1 can sliced button mushrooms
1 stalk celery, chopped
1 can corn kernels
1/2 cup flour
1 teaspoon dried basil
1 1/2 cups chicken stock (from Set A)
Shredded chicken (from Set A)
Diced carrots (from Set A)
1 ¼ cup cream
Salt and pepper, to taste
Set C:
Boiled Potatoes (from Set A)
1/2 cup butter
3/4 cup cream
Salt and pepper, to taste
Quick-melt cheese, for topping

Chicken Doritos Casserole - A Fast and Easy Party Food
This chicken Doritos casserole is the ultimate snack or party food. It is a dish for young and seasoned alike. I mean, lets face it, everybody loves Doritos and that wonderful taco mixture that goes with it. I often serve this up at social gatherings and it is always a hit with everybody, not only with the kids.
You can, of course, add extra ingredients if you are so inclined. Some garlic or onion powder would certainly not go amiss. Some have even been know to add olives, but it's entirely up to you. Although I like cheddar, you can use your favourite cheese.
As always, you can add your own variations to the dish. Give it a try and let us know what you think.

Ingredients:
For the Mixture:
2 cups of left over chicken
1 1/2 cups of canned corn, drained - peaches and cream
1 cup of spicy diced tomatoes
1 cup of black beans
1 can of cream of chicken soup - about 1 cup
1 cup of sour cream
1 tbsp of taco seasoning
pepper to taste1 cup of grated cheese of your choice
1 bag of crushed cheese Doritos
1 fresh chilli, chopped for garnish
1 tbsp of fresh parsley chopped for garnish
Method:
Preheat your oven to 350 F or 180 C.
To make the mixture combine all of the ingredients, except the Doritos, into a mixing bowl and mix until well combined.
Lay 1/2 the Doritos over the bottom of a casserole dish followed by a layer of the mixture. Do not mix or you will make a mess. Just simply place the mixture on and spread it out gently and evenly.
Bake for about 20 minutes.
Remove from the oven and spread the remaining Doritos over followed by the cheese.
Return to the oven and bake for an additional 7 minutes until the cheese is melted.
Garnish with chillies and parsley.
Enjoy your Chicken Doritos casserole.

This chicken pasta bake is cheesy, creamy and comforting. This dish contains everything you need: pasta, chicken pieces in tomato sauce, béchamel sauce and melted cheese. The perfect dish for family weekend family dinner.

For the filling:
370g (13oz) Pasta of your choice
2 tablespoons Olive oil
3 Chicken breasts, cut into small cubes
1 Onion, chopped
3 Garlic cloves, crushed
2 Bell peppers, diced
1 tablespoon Tomato paste
400g (14oz) Tomato sauce/chopped tomatoes
Salt to taste
Black pepper to taste
1 teaspoon Oregano
1 teaspoon Paprika
For the béchamel:
6 tablespoons (90g) Butter
3/4 cup (90g) Flour
3 cups (720ml) Milk, warm
Salt to taste
Black pepper to taste
1/4 teaspoon Nutmeg
For the topping:
85g (3oz) Mozzarella, grated
85g (3oz) Cheddar cheese, grated
1. Preheat oven to 375F (190C). Prepare large and dip baking dish, set aside.
2. To a large pot filled with water add 1 tablespoon of salt and bring to a boil.
3. Meanwhile, in a large pan, heat olive oil over medium heat. Add chopped onion and sauté for 4-5 minutes, add crushed garlic and sauté for 1-2 minutes more. Add chicken cubes and cook, stirring occasionally, until cooked, about 5-6 minutes. Then add diced bell peppers and cook for 2-3 minutes. Add tomato paste, tomato sauce, salt, pepper, paprika, oregano and stir well. Cook for 3-4 minutes and turn the heat off.
4. When the water is boiling, add the pasta and cook to al dente (1-2 minutes less than in the package instructions).
5. Meanwhile make the béchamel sauce: in a large sauce pan, melt the butter, add flour and whisk until smooth paste forms, then cook for 1 minute. Gradually add warm milk, while whisking constantly. Keep whisking over medium-high heat until the sauce is smooth and thickened. Stir in salt, pepper and nutmeg.
6. Add the sauce to the pasta, the add the chicken mixture. Stir until well combined.
7. Transfer to the baking dish. Sprinkle on top grated mozzarella and grated cheddar.
8. Bake for about 25-30 minutes, until golden-brown and bubbly. Let cool slightly before serving.
