Stuffed Mushrooms | How to make Spinach & Cheese Stuffed Mushroom | Appetizer Recipe
Welcome to Bhakti’s Kitchen.
Today, I’m sharing easy and simple stuffed mushrooms recipe. This can be a perfect party appetizer for Christmas days.
Mushrooms are very healthy. It is rich source of Vitamin B and several others minerals such as potassium, copper, iron and so many.

Ingredients List:
Mushrooms – 500 gm
Olive oil – 1 tsp (any cooking oil can use)
Butter - 2 tsp
Finely chopped garlic – 1 tbsp
Finely chopped onion – ¼ cup
Finely chopped green bell pepper – ¼ cup
Finely chopped red bell pepper – ¼ cup
Finely chopped spinach – ¼ cup
Mixed herbs – ½ tsp
Red chili flakes – ¼ tsp
Mozzarella cheese – 2 tbsp
Salt to taste
Instructions:
1. Preheat oven at 400°F or at 200°C for 10 minutes.
2. Remove stems of all mushrooms and cut little bigger to make hole so that stuffing can put properly into mushrooms.
3. Line all mushrooms onto baking tray. (Line baking tray with aluminum foil) keeping some distance with each other.
4. Now, to prepare stuffing in a pan add butter and olive oil on low to medium heat.
5. Once butter melts, add garlic and saute few seconds.
6. After that add onion and cook for a minute or two. (Don’t let onion turns brown here)
7. Now add green and red bell pepper, spinach, mushrooms and saute for a minute.
8. Add mixed herbs, chili flakes, black pepper powder and salt.
9. Mix everything well and turn of the heat. Stuffing is ready.
10. Let stuffing cool down completely.
11. Now, take a teaspoon of stuffing and put into each mushroom.
12. After that add some cheese (any cheese may be use) on top of the mushrooms.
13. Put the baking tray into preheated oven and bake for 20 minutes.
14. Take out baking tray from oven and serve this stuffed mushroom as starter for party or any occasion.

Ingredients:
20 Baby Bella mushrooms
8oz Cream cheese
1/2 Medium size onion, chopped
3 Garlic cloves, chopped
1/2 Jalapeño, chopped
1/2 cup Parmesan cheese, shredded
2 cups baby spinach
1/4 cup Sharp Cheddar cheese
2 tbsps of Olive oil, or any oil to cook
Salt per taste
-Baking tray with foil (easy to clean) If not using foil, spray with oil.
Bake:
-Pre heat oven to 350F degree(180C) Bake for 20-25 minutes. I baked these for 22 minutes.

These are the best stuffed mushrooms I have ever eaten. So creamy and delicious and the best of all so easy to make. I love this recipe. If you try it, please let me know how it was.
INGREDIENTS:
-300g mushrooms (about 12 pieces)
-200g (3/4 cup) cream cheese
-100g (1 handful) of spinach
-1-2 garlic cloves
-salt, black pepper, garlic powder
-100g (2 cups) of cheddar cheese
*Bake it for 15 minutes at 200C (392F) and enjoy.

Ingredients:
For the crust:
2¼ cups (280g) flour
3/4 cup (170g) cold butter, cubed
1 teaspoon salt
4-6 tablespoons cold water
For the filing:
14 oz (400g) fresh spinach
1 yellow onion
1 red onion
2 garlic cloves, crushed (optional)
3 eggs
1 cup (240 ml) heavy cream
7 oz (200g) gruyere cheese
3oz (90g) blue cheese such as gorgonzola
1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon nutmeg
Butter + olive oil for frying
Method:
1. In a food processor process flour, salt and cold cubed butter. process until crumbs are formed. Add cold water, process until dough is formed. Do not over mix.
2. Transfer the dough to a work surface, pat into a ball and flatten into a disk. Wrap in plastic and refrigerate for 30 minutes.
3. Meanwhile make the filling: chop onions. In a large pan, melt 2 tablespoons butter and some olive oil. Add chopped onions and sauté for 5 minutes. Add crushed garlic and spinach. Cook until wilted and reduced in size. Drain.
4. In a large bowl beat eggs, heavy cream, salt, pepper and nut meg. Set aside.
5. Roll out the dough on a lightly floured board. Lightly dust the top of the dough. Roll until the dough is about 1/8 inch thick. Transfer the dough to a 9-10-inch (24-25cm) pie pan. evenly press the pastry onto the bottom and up the sides of your pan. Trim off the excess dough off the top of the pan. Gently pierce the bottom of the crust with a fork. Transfer to the freezer for 30 minutes.
6. Preheat oven to 350F (175C)
7. Blind baking: line a parchment paper over the dough. Fill with dry beans, rice or pie weights. Bake for 15 min. Remove the weights and the parchment paper. Return to oven for another 5-10 minutes or until crust is slightly golden. Remove from oven.
8. Sprinkle the spinach into the pie crust, sprinkle shredded gruyere cheese and cubed blue cheese. Pour the eggs and cream mixture over the spinach and cheese.
9. Bake until golden brown and set, about 35 minutes. Allow to cool slightly.
