Rotini With Roasted Green Tomato Sauce
It's the last of the season's tomatoes. We picked up some green tomatoes at our local farm market and make a roasted tomato sauce to put on top of rotini. I hope you enjoy this Mediterranean diet recipe.
Ingredients: rotini pasta, green tomatoes, garlic, scallions, curly leaf parsley, extra virgin olive oil, garlic, red pepper flakes, Italian herb blend, Romano cheese.

Serves 2 ~
A simple recipe for Creamy Tomato Pasta:
Ingredients:
8 ounces of pasta
2 tablespoons of butter
1 small onion, chopped
2 cloves of garlic, minced
1 can of diced tomatoes
1/2 cup of heavy cream
1/4 teaspoon of red pepper flakes
Salt and pepper, to taste
Parmesan cheese, grated (optional)
Instructions:
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large pan, melt the butter over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.
Add the minced garlic and sauté for another minute.
Add the can of diced tomatoes (including the juice) to the pan and stir well.
Add the heavy cream and red pepper flakes to the pan and stir well.
Bring the sauce to a simmer and let it cook for 5-7 minutes until it thickens slightly.
Add salt and pepper to taste.
Add the cooked pasta to the pan and toss well to coat it in the sauce.
Serve the pasta hot, topped with grated Parmesan cheese (if desired).

CREAMY PASTA WITH TOMATOES AND SPINACH We will need: Nest pasta 7pcs Cream butter 30g Vegetable oil 1t I Cherry 250g Spinach 60g Dried garlic 1/2 clove Salt Cream 10% 300g Cheese 80g Let's cook: 1. Boil pasta in salted water according to the instructions on the package. Leave 1 tablespoon of the water in which the pasta was cooked. 2. Heat a pan with cream and vegetable oil. 3. Cut the cherries in half and put them in a hot pan, add dried garlic. Simmer for a couple of minutes on medium heat (I have 6). 4. Add spinach and salt, simmer for a couple of minutes, until the spinach reduces in volume. 5. Cut the fire down to a small (2-3). Heat the cream in the microwave. 6. Pour warm cream to the tomatoes, constantly stirring. 7. Add a spoonful of water in which the pasta was cooked. 8. Put out the finished pasta, mix well, heat for about 2 minutes on low heat. Here it is important not to boil the cream so that it does not overlap, but to slowly heat up. 9. Add cheese at the end, I have a semi-hard creamy one????. You can add

Ingredients
10 ounces dry pasta (any kind)
1 pound boneless skinless chicken breast
1 teaspoon Italian seasoning
1 teaspoon paprika
1 teaspoon garlic powder
salt & pepper to taste
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic minced
1 cup tomatoes diced
2 cups spinach chopped, optional
2 cups heavy cream (or 16 oz)
1/2 cups Parmesan cheese shredded or grated
salt & pepper to taste

15-minute Cherry Tomato Pasta
1 lb pasta of choice
3-4 garlic cloves, thinly sliced
¼ cup extra virgin olive oil
2 pints cherry tomatoes
6-7 leaves fresh basil, thinly sliced
1 tsp black pepper
Salt to taste
¼ cup fresh parmesan cheese (add more if you like)
Pasta water as needed
Bring a large pot of water to a boil seasoned with salt.
In a large skillet pour the olive oil and add in the thinly sliced garlic.
Turn the heat to medium heat and let the garlic infuse with the oil until golden brown, this should take about 3-4 minutes.
At this point you can cook the pasta when water is at a boil, so it will be ready at the same time as the sauce. Cook the pasta shy 2 minutes of al dente as per package directions.
Add in the whole cherry tomatoes and stir them around until they soften and start to burst. You can use a wooden spoon to help with this until it reaches a saucy consistency, this takes about 7-8 minutes.
Add in fresh basil. Season with pepper and salt.
Drain pasta (but reserve the water) and add it in to the skillet. Pour in about ½ cup of the pasta water and stir.
Keep stirring the pasta around the skillet for about 2 minutes.
Adjust for seasoning and pasta water, and add parmesan cheese as you like.
