HOW TO COOK PEACH FRITTERS FLUFFY AND SOFT
1 cup self rise flour 1/2 tabs val ex 1 egg
3 tabs powder sugar 1/3 plus 1/4 cup of milk
GLAZED
3 tabs milk 1 cup powder sugar 1/2 teas val ex
Peach Fritters
How to make peach fritters:
1 1/4 cup diced peaches fresh or canned. If canned drain well
1 cup of flour
2 tablespoons of sugar
1 teaspoon of salt
1 teaspoon of cinnamon
1 teaspoon of baking powder
2 eggs beaten
1/3 cup milk
1 tablespoon of butter melted
Deep fry in about 3 inches of oil
Mix dry ingredients together add milk, butter, and eggs mix well and fold in peaches
Fry in 350 oil for around 4 minutes. Use about a quarter cup for dipping batter in oil.
Drizzle with icing and enjoy
Icing recipe is half a cup of powdered sugar and a tablespoon of milk mixed well.

It is peach perfection. Warm, soft inside, crispy outside, filled with a great amount of ripe summer peaches. These babies get pan-fried until they reach golden brown perfection. And the final touch is a wonderful sweet glaze, made with ricotta cheese and maple syrup. These fritters take it over the top.

Serves: 18 fritters or more depending on the size
Ingredients for the fritters
2 cups all-purpose flour
2 cups plain kefir (buttermilk or plain yogurt)
1 teaspoon pink salt
1 teaspoon baking soda
2 teaspoons vanilla extract (optional)
Pinch of cinnamon or cardamom (optional and I didn't use in the video)
2 cups peaches chopped no need to peel (3-4 peaches)
4 tablespoons of coconut sugar
Oil for frying (I used coconut oil in the video)
Ingredients for the glaze
3/4 cup ricotta cheese (I used homemade in the video, see notes above)
or crème fraiche
1/3-1/2 cup maple syrup
2 teaspoons vanilla extract
Directions
First make a sponge, and for that, mix the first two ingredients (flour and kefir, cover and leave at room temperature for 8-12 hours), depending on the temperature in your kitchen, minimum 6 hours is required if your kitchen is warmer than 70F. This sponge should be bubbly and spongy.
To the chopped peaches add sugar and mix until all peaches are coated.
Heat the oil, and the perfect temperature should be 375F. Even for pan frying the temperature of the oil and the size of the pan is important. I used a cast iron pan.
Now fold the chopped peaches into the sponge. Don't overmix.
Using a cookie scoop or two spoons, place one fritter at a time and do so away from yourself to avoid any splashing of the oil. Cook for 2-3 minute per side.
Fish them out with a spider or slotted spoon and lay them on paper towels.
For the glaze, whisk together the two ingredients (ricotta cheese and maple syrup), and then generously pour over the fritters, leaving some on the side.
Enjoy right away!

Ingredients
Fritters
▢ 1 cup (125 g) all-purpose flour
▢ 1 tablespoon granulated sugar
▢ 1 teaspoon baking powder
▢ ½ teaspoon cinnamon
▢ ¼ teaspoon ginger
▢ ¼ teaspoon kosher salt
▢ 1 pinch ground nutmeg
▢ ¼ cup (60 g) heavy whipping cream
▢ 3 ounces vanilla yogurt
▢ 1 large egg
▢ 1 can (15.25 ounces) peaches, diced and juice reserved for glaze
▢ Vegetable or canola oil, for frying
Glaze
▢ 1¼ cups (150 g) confectioners' sugar
▢ ¼ teaspoon vanilla
▢ 3-6 teaspoons reserved peach juice, (optional)
Instructions
In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, salt, and nutmeg. Set aside.
In a separate bowl, beat together the whipping cream, yogurt, and egg.
Add the egg mixture to the flour mixture, stirring until combined.
Fold in the peaches.
Fill a frying pan halfway with oil. Heat over medium heat until the oil reaches 375°F with a candy thermometer.
Slowly drop ¼ cup of batter into the oil and let fry until golden brown, about 2-4 minutes per side depending on the heat of your oil.
Flip and fry until the opposite side is golden brown. To test for doneness, insert a small knife (or toothpick) into the center. If there's still uncooked batter in the center, fry for a bit longer. Transfer to a paper towel-lined cooling rack and let cool. Repeat with the remaining batter being sure to check the temperature of the oil throughout the process.
Glaze
Make the glaze by combining the confectioners' sugar, vanilla, and 3 teaspoons of peach juice. Add more juice, 1 teaspoon at a time, until a pourable consistency is reached.
Drizzle the glaze over the cooled fritters and let dry.
