Today we're making brown sugar pecan cookies with a homemade brown sugar frosting! These cookies are super easy to make, great for the upcoming holiday season!

Ingredients:
Cookie Dough:
1 cup butter, room temp
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla extract
2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup finely chopped pecans
Brown Sugar Frosting:
1 cup packed brown sugar
1/2 cup milk
1 tbsp butter
2 cups powdered sugar
1/2 cup finely chopped pecans (for sprinkling)
Directions:
To a big bowl, add in the softened butter and both sugars. Mix until nice and creamy. Then add in the vanilla extract and egg. Give that a good mix.
Add the dry ingredients to the wet and mix until combined. Toss in the 1/2 cup of finely chopped pecans and mix.
Scrape the sides of the bowl bringing everything to the middle of the bowl. Cover with foil or cling wrap and refrigerate for 30 minutes. The dough needs to firm up, otherwise they will bake up really flat if you skip the fridge step. I neglected (haha) my dough and left it in the fridge for over 2 hrs. If you find yourself in the same boat, let your dough soften on your counter a bit until you easily work with it. You want it to be firm, but not rock hard.
With a cookie scooper, about a tablespoon's worth, scoop out your dough and roll it into a ball. Place your ball onto a parchment lined baking sheet. Into the oven at 350 degrees for 10-12 minutes, depending on your oven.
Let your cookies cool on a cooling rack with parchment paper underneath the cooling rack. This will catch any frosting drips later.
Once the cookies have completely cooled, start making the frosting. To a small pot on the stove, add in the brown sugar and milk. Make sure to stir constantly. Let the mixture come to a boil, and then let it boil for 3 minute, stirring constantly. Once the 3 minutes are over, remove from the stovetop, add in the butter and powdered sugar.
The frosting will want to set up fairly quickly. Grab a spoon and spoon on a dollop of frosting onto each cookie. While the frosting is still wet, add on a sprinkling of finely chopped pecans. Do this for every cookie.
Note: If your frosting sets up before you're done topping each cookie, you can toss your pot on the stove and reheat the frosting. This should only take a few seconds, then you'll be good to continue.

✅Ingredients
• 1 cup butter
• 1/3 cup granulated sugar
• 2 teaspoons water
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1 cup chopped pecans
• 3 tablespoons powdered sugar, for rolling
✅Instructions

1️⃣ 00:00:11 - In a large mixing bowl, cream together butter and sugar until fluffy. Beat in water and vanilla.
2️⃣ 00:00:41 - Stir in flour and pecans until well combined. Shape dough into 1-inch balls. Place at least 2 inches apart onto two lightly greased or parchment-lined baking sheets.
3️⃣ 00:01:19 - Place shaped cookies into the fridge for 30 minutes while the oven preheats to 325 degrees Fahrenheit.
4️⃣ 00:01:49 - Bake in the preheated oven for 18 to 20 minutes until lightly golden. Remove from oven and let cool completely on the baking sheet.
5️⃣ 00:02:04 - Roll cooled cookies in powdered sugar*. Store in an airtight container.
NOTES
*One alternative is to roll your cookies in powdered sugar while still warm. The powdered sugar will melt slightly and create a different effect on the cookie. Try both and see which you like best! Either way is delicious.
