Hillbilly Jilly Pickled Whole Jalapenos
Ingredients
Makes one 1-quart jar
● About 1 lb. of fresh whole jalapenos – depending on pepper
size you’ll use ¾ to 1 lb.
● 2 cups white vinegar
● 2 cups water
● 1 ½ tsp pickling / canning salt
● 1 clove fresh garlic - chopped for more flavor or whole for less
garlic flavoring
● ¼ cup coarsely chopped onion
● ¼ cup sliced carrot – about ¼ in thick
● One 1-quart jar with new lid /band
Directions
1. Bring a large pot of water to a boil – make sure there is enough
water to reach ¾ way to top of 1-quart jar
2. Bring vinegar and water mixture to slow boil in saucepan
3. Wash jalapenos
4. Slice garlic, onion and carrot
5. Add peppers garlic, onion, carrot and salt to sterilized jar
6. Apply lids, bands and place in boiling water bath for 10
minutes
7. Remove and let cool to room temperature
Note: When handling peppers use gloves if possible
~ NEVER TOUCH FACE OR RUB EYES ~ and wash hands thoroughly after handling peppers.
*Optional - poke holes in peppers with toothpick to let flavor permeate peppers and pepper juice.
Peppers are ready and can be eaten as soon as they have cooled to room temperature, but better with age!

This is a good pickled jalapeno recipe, fresh jalapenos can either be a medium-heat or mild pepper. If you're pickling fresh jalapenos at home, note that the pickling process will slightly reduce the heat of fresh peppers. There is a difference in he texture of the pickled jalapeno pepper as well.

Pickled Jalapeno - Chili Peppers
Ingredients:
10-12 whole jalapenos
1 tbsp salt
1 tbsp sugar
6 whole garlic (smashed)
1/2 onion (sliced)
1 cup water
1 cup white vinegar
Directions: (Checkout Ray Mack's Kitchen and Grill on YOUTUBE)
0:00 - ingredients
0:19 - Add all of your ingredients except for the jalapenos.
0:49 - Bring to a boil. Add jalapenos, Stir, and remove from heat.
1:27 - Let sit for at least 20 minutes then use tongs to remove the jalapenos from the pot to a jar; cover it with the liquid from the pot filling the jar.
2:06 - Store in the fridge for up to 6 months.
I use this for cooking only...

We grow our jalapenos. However, you can still make these pickled jalapenos by purchasing about 60 jalapeno peppers at the grocery and following our recipe. This recipe will make about 6 8oz jars of pickled jalapenos
