Pineapple Applesauce Muffins
Growing up I loved to make my parents and siblings (4 brothers, 1 sister) breakfast. Of course, on Mother's Day, it was a special treat for my mother to have someone help her in the kitchen! Here's a yummy recipe for a delicious, moist muffin that goes great with an omlette or scrambled eggs! Enjoy it alone or topped with honey butter — for Mother's Day or any day. Enjoy! Pineapple Applesauce Muffins
Ingredients:
2 c. all-purpose flour
2/3 c. sugar
8 oz. pineapple chunks (fresh or canned in their own juice, drained)
1 c. applesauce (try my Chunky Applesauce recipe. Search Chunky Applesauce at SimplyDeliciousLiving.com, or use Trader Joe's Chunky applesauce -- you want the applesauce chunky because makes muffin very moist)
2 large eggs
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 tsp. pumpkin spice
2 tsp. ground cinnamon
1/3 c. coconut oil
1 c. pecans, diced
4 T. butter
3 T. honey
Recipe Preparation:
Pre-heat oven to 350°. Grease muffin cup tray with coconut oil.
In a large bowl, add flour, sugar, pecans, baking soda, baking powder, salt, cinnamon and pumpkin spice.
In another large bowl, stir together the coconut oil, egg, applesauce and pineapple.
Pour wet ingredients into the dry flour mixture. Mix until the batter is blended. Use a spatula to scrap the sides of the bowl.
Spoon batter into the muffin cups filling to the rims.

How To Make Savory Pineapple Muffins
Ingredients
2 cups of baking mix
2 tbsp of sugar (up to 1/2 cups can be added for a sweeter muffin)
*1 8oz can of crushed pineapple
1/2 cup of milk
1/4 cup of melted butter or vegetable oil
Directions
Add all the ingredients to a mixing bowl. Stir until well blended. Divide batter into 12 muffin cups. Bake at 350 until lightly golden. Approximately 20 minutes. Enjoy
*Original recipe calls for 1 16oz can of drained pineapple tidbits.

Pineapple Cake
Ingredients:
Canned Pineapple - 1/2 cup (150 g ) - You can use 1/2 cup fresh pineapple chunks
Pineapple Juice-1/4 cup ( 60 ml) - I used the juice from canned pineapple
Powdered Sugar-1 cup (150 g) - (powder 3/4 cup granulated sugar)
All purpose flour- 1 cup ( 150 g)
Egg-2 large ( At room temperature)
Vanilla Essence-1/2 teaspoon
Baking powder-1 teaspoon
Baking soda-1/4 teaspoon
Salt-1/4 teaspoon
Butter-100 g
Baking:
Bake in a preheated oven ( preheat at 180C for 10 minute) at 180C for 20 minutes. ( I usually bake placing the tray on lower rack, with 2 rods on)
