These easy Pineapple Muffins is deliciously fluffy and tender. Made of fresh pineapple or can, sour cream, butter, sugar, and all-purpose flour.

Pineapple Muffins Ingredients
Wet Ingredients
• ⅓ cup unsalted butter at room temperature
• ⅓ cup brown sugar packed
• ¼ cup granulated sugar
• ¾ cup pineapple finely chopped or can crushed pineapple, drained
• 2 eggs at room temperature
• ⅓ cup sour cream or yogurt
• 1½ tsp pure vanilla extract
Dry Ingredients
• 2 ¼ cups all-purpose flour 280 g
• 1 ½ tsp baking powder
• ½ tsp salt

EASY Pineapple Muffins Recipe | Val's Kitchen
VAL’S KITCHEN
PINEAPPLE MUFFINS
2 cups all-purpose flour
2 tsp baking powder
½ tsp salt
½ cup butter, softened
1 cup sugar
2 large eggs
1 ½ tsp pure vanilla extract
1 (8 ounce) can crushed pineapple, undrained
Preheat oven to 350 degrees. Line 12 muffin cups with paper baking cups.
Sift together flour, baking powder and salt then set aside.
Cream the butter and sugar until light and fluffy (about 5 minutes). Beat in the eggs one at a time, then add vanilla. Stir in the flour mixture (don’t overmix). Fold in the pineapple.
Using spoon, scoop batter evenly into muffin cups (about ½ full). Bake for 25 minutes or until muffins are lightly browned on top. Remove muffins from pan and place on cooling rack.
We like to eat right out of oven, sliced in half with butter!
Store leftovers at room temperature.
Recipe can easily be doubled!

Quick and Easy Pineapple Muffins
Ingredients:
180 grams all purpose flour
1/2 teaspoon salt (skip if using salted butter in recipe)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
2 whole eggs
100 grams white sugar
75 grams salted/unsalted butter at room temperature
1-2 drops yellow food colour (optional)
1/2 teaspoon pineapple or vanilla essence
1-2 tablespoons milk
100 grams chopped fresh pineapple
Bake at 180 degrees Celsius for 18-20 minutes. This recipe makes 8 medium sized muffins.

All Purpose Flour - 1 & 1/2 cups
Baking Powder - 1 tsp
Baking Soda - 1 tsp
Cinnamon Powder - 1 & 1/2 tsp
Salt - 1/2 tsp
Raisins -1/2 cup
Carrots - 1 cup (grated)
Pineapple - 1 cup (crushed/chopped)
Sugar Syrup 1/3 cup (obtained from crushed pineapple tin)
Refined Oil- 1 cup
Sugar - 1 cup
Eggs - 2
Vanilla Essence - 2 tsp
Cupcake Liners - as required
