2 c Cooked Idaho Pinto Beans
divided 1 lb Ground beef
1 c Chopped onion, divided
8 oz Tomato sauce
2 ts Chili powder
1 t Cumin
1/2 ts Salt
1 lb Frozen bread dough :
thawed
1/2 c Chopped green pepper
1/2 lb Grated Monterey Jack
Red pepper flakes to taste Guacamole :
(recipe below)
To make this pizza meatless, omit the beef and increase the beans to 3 cups, mashing 2 cups. Mash 1 cup of the beans; set aside remaining cup. Brown beef with 1/2 cup onion in large skillet. Stir in mashed beans, tomato sauce, chili powder, cumin and salt. Simmer 10 minutes. Pat or roll dough to cover bottom of greased 14-inch pizza pan. Spread with bean-beef mixture. Top with remaining onion, green pepper, reserved whole beans and cheese. Sprinkle with red pepper flakes. Bake in pre-heated 400-degree F oven for 15 minutes or until crust is browned. Cut into wedges. Top each serving with a dollop of guacamole. Guacamole: Mash 1 medium avocado with 1 clove minced garlic and 1 tablespoon lemon juice. Add liquid red pepper sauce and salt to taste. Barbecue Pizza On The Grill - This week I want to share with you a BBQ Pizza recipe that uses pulled pork. This recipe is quick and easy. The best part is that this BBQ pizza is cooked right on the grill.
Barbecue Pizza can be cooked on just about any grill as long as you can control the heat. For this recipe for grilled bbq pizza the grill needs to be 350 to 400 degrees or on a medium setting.
I use a store bought pizza crust for this recipe. You can make your own crust if you like, but I've found these prepared, thin crusts are really good on the grill plus it's quick & easy. The typically come in a 2-pack, so the kids can create their own pizza as well.
Here's the recipe for my quick pizza sauce:
Pizza Sauce:
28oz can of Crushed Tomatoes
4-5 cloves of Fresh Garlic chopped
¼ cup Red Onion chopped
2 TBS Olive Oil
3-4 Fresh Basil Leaves chopped
¼ cup Red Wine
½ cup Water
Salt and Cracked Black Pepper to taste
Pinch of Sugar
Heat the Olive Oil in a sauce pan over medium heat. Sautee the garlic and red onion for 2-3 minutes. Add the crushed tomatoes, basil, and red wine. Bring to slight boil and season with salt, black pepper, and pinch of sugar. Reduce the heat to low and add the water. Simmer for 30 minutes. The sauce can be made in advance and held in the refrigerator for 2-3 days.
Once you have the grill fired up, it's time to assemble the bbq pizza. Place the crust on a round pizza screen and ladle on the sauce. Use the back of a large spoon to evenly spread the sauce almost to the edge of the crust; then sprinkle a border of the mozzarella cheese around the edge. Starting with the pulled pork, spread it around evenly on top of the sauce.
Repeat with the onions and lastly the sliced jalapenos. If you don't like the heat you can leave this step out but they go really great with the pulled pork! With a thin crust it's best to limit the toppings to 2-3. The pizza will grill more evenly and it will stay on the pizza instead of falling in your lap. Lastly top the pizza with more mozzarella and it's ready to grill.
Carefully slide the pizza off the screen directly onto the grill. Since the crust is precooked this is simple. Close the lid and set a timer for 10 minutes. The pizza will cook pretty fast, so you'll want to keep an eye on it. I check the bottom of the crust half way just to make sure it's not burning. Also if one side seems to be cooking faster on top give it a rotate. Once the edges have browned and the cheese is completely melted the pizza is done. Slide the pizza screen underneath and take it inside to your cutting board.
To finish the pizza, drizzle on your favorite bbq sauce; now it's ready to cut into serving portions. What I really like about this pizza is the smoky flavor the crust has plus it gets crispy. The next time you're looking for something to do with left over BBQ give a grilled pizza a try. You can use any toppings you like get creative with it!

COME SI SCEGLIE LA FARINA GIUSTA
IL GLUTINE:
il glutine è una proteina idrofoba (non si solubilizza nell'acqua) che deriva dall'unione delle due proteine più abbondanti della farina: glutenina e gliadina.
Più la farina è ricca in queste due componenti più glutine può formarsi e più forte sarà il nostro impasto.
LA FORZA:
espressa con la lettera W ci da una chiara idea su come il nostro impasto si comporterà durante e dopo la lievitazione.
La forza è misurata dalle case produttrici attraverso un apparecchio di laboratorio chiamato alveografo di Chopin ed è direttamente proporzionale alla quantità di glutine nell'impasto.
Per definizione farine con W tra 180-260 sono farine di media forza, sotto i 180 sono deboli e sopra i 260 sono forti.
LA SCELTA:
si basa sulla quantità di idratazione dell'impasto e sul tempo di lievitazione:
più alto il contenuto idrico e/o il tempo, maggiore dovrà essere il W della farina.
