Plantain Lasagna (Pastelon) easy & delicious!
This plantain lasagna recipe was so much more than I expected, absolutely delicious!!

**Ingredients**
1 1b Mince Beef
3-4 Ripe plantains
Chopped (garlic, onion, bell peppers, scallion & thyme)
Salt & Season to taste
2-3 cups pasta sauce
3-4 cups cheese or your choice
1 egg
1 cup milk
Bake at a 350 degree preheated oven for about 25 minutes or until cheese is nice and golden.

Plantain Lasagna Piñon-Pastelon de Platano Plantain Casserole Recipe
Plantain Lasagna Piñon-Pastelon de Plátano This Plantain Casserole combines two staple ingredients in the Caribbean, particularly in my beautiful island of Puerto Rico. The dish comes together by layering Ripe Plantains with Beef Picadillo. Most recipes use beaten eggs between each layer to serve as the glue that keeps the casserole together, as shown in the video. Pinon (Sweet Plantain Lasagna/Casserole)
4-6 Ripe Sweet Plantains
(Sliced lengthwise)
Egg mixture:
6 large beaten
1/2 cup water
1 Tbs Sazonador total
Cheese mixture:
1 cup part-skim shredded mozzarella
1 tsp. dried parsley
1 tsp.onion powder
1 tsp. garlic powder
Picadillo (See step-by-step video for recipe)
Procedure: Begin by preparing the picadillo recipe as shown on the step-by-step video. Slice plantains lengthwise and set aside. In the meantime beat eggs with water and sazonador total. Finally, mix cheese and seasonings in a bowl to combine. Spray baking pan with cooking spray, pour 1/3 of egg mixture in the bottom of the pan. Line plantain slices over egg mixture to cover the bottom of the pan. Sprinkle some cheese over the plantains. Then, add a layer of picadillo over plantains and continue layering the pan with plantain, cheese, picadillo, and finishing with the final layer of plantains and egg mixture. Place plantain lasagna or casserole covered with foil in a preheated oven at 350* degrees and bake 45 minutes to 1 hour remove foil in the final 15 minutes of baking and continue cooking until golden brown on the top. If desired top with remaining shredded cheesed during final 5 minutes of baking. Enjoy. Buen Provecho.
HOW I MAKE PASTELON (SWEET PLANTAIN LASAGNA)
INGREDIENTS;
Bit olive oil
Canola oil for frying
Half green bell pepper
Half red bell pepper
Half any color onion
Couple olives (optional)
3 garlic cloves
Bit of cilantro
1 can tomato sauce
2 beaten eggs
Bit of sofrito (Sofrito is basically the same veggies I added but in a food processor)
1 lb. Ground beef (you can use ground cheese or ground Turkey)
1 tbsp. Beef bouillon
4 ripe plantains cut in lengthwise
3 cups mozzarella cheese divided
METHOD;
Add bit olive oil to pan.
Saute all the veggies till soft, add the meat & tomato sauce & beef bouillon. Cook till done, set aside.
Peel the plantains & cut them in half then lengthwise.
Heat canola oil pan, fry them in bashes, remove, add salt to taste.
Assemble,.plantains, meat, cheese and repeat 2 times topping with plantains.
Add the beaten eggs, cover with foil and bake 350 for 25 min.
Remove from oven, add remaining cheese, back to oven to broil 5 min.

How To Make Vegan Pastelon | Plantain Casserole
ADVICE ON EATING VEGAN
I get a lot of people who tell me they don’t know what to do during social gatherings and family gatherings. Mainly those who come from a Hispanic background or Italian, African American the list goes on. Well I’m here to give you a little advice on that. It all starts with YOU. If you feel strongly about this life style and you have made the connection between the animals and the meat that’s in your plate, or you figured out that eating meat may not be the best option for your health, than there is not one person that can convince you or pressure you into eating what you said you will not eat.
On the other hand, when invited to such events, it does require a bit of preparation. I’ll tell you what I like to do. If it’s a family gathering or a gathering where it’s more of a potluck then I ALWAYS bring a vegan tray. One that everyone can eat and doesn’t look like it’s “vegan” people tend to form opinions once you tell them it’s vegan. Their taste buds change or something. If It’s not an event where you can bring your own tray then I eat before I go. If I’m going to a non vegan restaurant, I look at the menu in advance and start creating meals for myself, whether it’s tweaking an entree or ordering all sides, I always make it work. And if you’re not sure if something is vegan, ask for an allergic menu, all restaurants should have one.
