German Plum Cake with Streusel | quick and easy crumble birthday cake | vegan recipes

The plum season is starting very slowly and I am happy to be able to pick the first plums from the tree. I'm going to preserve the plums and make jam and chutney out of them.
But the classic is probably the plum cake with crumbles.
This crumble cake recipe is quick and easy to make. Of course, the recipe not only works with plums, but also with apricots, peaches, cherries and other types of fruit.
Since the fruit releases liquid, the dough will be a little firmer.
You can also use my apple cake recipe as the batter if you like it very soft and fluffy.
I use a round baking pan with a diameter of 20 cm.
ingredients
10 plums (approx. 300 g)
Crumble
100 g wheat flour
50 grams of sugar
50 g cold butter (vegan)
1 tsp cinnamon (optional)
Dough
200 g all-purpose-flour
80 grams of sugar
1 teaspoon Baking powder
1 teaspoon of vanilla essence or 1 packet of vanilla sugar
80 g tasteless oil (I use rapeseed oil)
100 g milk (I use soy milk)
1 tsp apple cider vinegar

Christmas Cake Recipe - Easy Fruit Cake that's beautifully moist!
An easy Christmas cake that turns out perfect every time. No creaming, beating or soaking of fruit required! Plus tips on storage and feeding your Christmas cake.
Feeding your fruit cake in the weeks leading up to Christmas helps to build and intensify the flavour of the cake, and will ensure it's beautifully moist.
Oven Temp:
Bake in the oven at 150C/300F (fan) for 45 minutes, then 140C/275F (fan) for a further 60-75 minutes - until an inserted skewer comes out clean.
Alcohol-free Christmas Cake:
For a non-alcoholic version, you can replace the alcohol with cold tea, fresh orange or apple juice.
You can then feed the cake with either:
1. Cold tea
2. Fresh orange or apple juice
3. Ginger cordial mixed with water (2 tsp mixed with 2 tbsp water)
4. Rum flavouring mixed with water (⅛ tsp mixed with 2 tbsp water).
If you do this, don’t make the cake any earlier than November, as juice (as opposed to alcohol) could start tasting funny after more than a couple of months.

The easy fruit cake ingredients:
3/4 cup (175g) unsalted butter, chopped
1 packed cup (210g) light brown muscavado sugar
2 + 2/3 cups (400g) mixed dried fruit
1 cup (200g) glacé cherries roughly chopped
1 cup (100g) dried cranberries
Zest and juice of 1 orange
Zest of 1 lemon
1/2 cup (120ml) cherry brandy
1/2 cup (85g) ground almonds (coarsely ground - not the type that is like flour)
3 large eggs lightly whisked
1 + 2/3 cup (200g) plain/all-purpose flour
½ tsp baking powder
1 tsp ground mixed spice
1 tsp ground cinnamon
¼ tsp ground allspice
To feed the Christmas cake:
Cherry brandy (1-2 tbsp per week)

Here’s My Recipe ????????
Apricot Fruit Cake
Makes 2 loaves
Ingredients
2 1/2 cups all purpose flour
1 teaspoon baking powder
4 teaspoons vanilla
4 extra large eggs
1 cup butter
1/2 cup cream cheese
1 1/3 cup sugar
2 cups dried apricots chopped
1/2 cup raisins
1/2 cup currants
1/2 cup sultanas
2 1/2 cups filtered water
1 cup cherries chopped
1 cup desiccated coconut toasted
1 cup pecans chopped
1/2 cup slivered or sliced almonds for topping
Method
Roast nuts and set aside. Toast coconut and set aside.
Chop up apricots and cherries and set aside. In an electric stand mixer cream butter and cream cheese until light and fluffy. Add sugar and continue to beat. Add eggs and beat one at a time. Add vanilla and mix. Heat water and 1/3 cup sugar in a pot and stir in the raisins, currants, sultanas and apricots. Simmer on medium low until all the water evaporates. Allow to cool. In a separate bowl sift flour and baking powder. Add cherries, coconut and the dried cooked fruit. Mix in until well coated with the flour. Add to the mixing bowl and mix on low speed until just incorporated. Do not mix too long as the fruit may get smashed. Scoop into two parchment lined loaf pans.
Bake in a preheated 325F oven for about one hour. Insert cake tester into middle of the loaf to make sure it’s fully baked. The tester will come out clean when it’s fully baked. For faster cooking it can also be baked in a 9 x 9” square baking pan. It takes exactly an hour in a convection oven. Allow to cool, remove parchment paper and dust lightly with icing sugar. Slice and enjoy.
