How To make Porcupines
Ingredients

ground, beef
1/2
cup
rice
1/2
cup
water
1/4
cup
onion, chopped
1
teaspoon
salt
1/2
teaspoon
celery salt
1/8
teaspoon
garlic powder
1/8
teaspoon
pepper
15
oz
tomato sauce
1
cup
water
2
teaspoon
worcestershire sauce
Directions:
Mix the meat, rice, 1/2 cup of water, the onion and the seasonings. Shape the mixture by tablespoons into 1 1/2-inch balls.
TO COOK IN A SKILLET: Heat 1 tablespoon of salad oil in a large skillet and cook the meatballs over medium heat until brown. Add remaining ingredients and heat to boiling. Reduce the heat, cover and simmer for about 45 minutes.
TO COOK IN THE OVEN: Place the meatballs in an ungreased baking dish, 8x8x2 inches. Mix the remaining ingredients and pour over the meatballs. Cover and bake in a 350 degree F. oven for about 45 minutes. Uncover and bake 15 minutes longer.

Porcupine Meatballs Vintage Recipe from the Great Depression

1 lb 90/10 percent lean ground beef
1 cup long grain white rice uncooked
1/2 C water
1/8 t celery salt
1/8 t pepper
mix by hand. roll into meatballs of desired size.
place in casserole
sauce: can Tomato Soup
add 1 T brown sugar
1 t worcestershire sauce
heat through. Pour over meatballs. Cover with foil or lid. Bake 350 degrees 35 to 40 minutes. Uncover. Cook additional 15 minutes.
serve over Rice, Mashed potatoes or Buttered Noodles. I usually have a steamed green vegetable with them and cornbread . Economical.

Good Old Fashioned PORCUPINE MEATBALLS Recipe
This was the very first thing I learned to cook in school cooking class. I was so proud of myself LOL!
The do taste great!
Here is a little history. They originated during the Great Depression. Rice was affordable and meat was expensive. By adding rice to the classic meatballs they could bulk up the amount of meatballs and make them stretch a lot further.
Where does the name come from? Most likely because when they simmer in sauce they start to resemble little porcupines when the cooked rice pokes out of the meatball like quills. So cute.
Here is how I make them. I added whipped potatoes and they go together perfectly, ummm so good.
