How To make Pork Or Lamb Sasaties
1 c Dried apricots
Water 1/4 c Vinegar
2 tb Curry powder
2 c Onions, chopped and cooked
-clear in 1/4 cup butter Salt to taste Stew a cup of dried apricots until soft, and put through a food mill. Add water to make 1 1/2 cups, then add vinegar, curry powder and onion. Salt to taste. If not hot enough, add a dash of Tabasco or cayenne. Marinate 1 to 1 1/2 inch cubes of pork or lamb or mutton in this for 12 hours, then broil. Use marinade for basting and sauce. Braai as we call it in my country or Bbq in some parts of the world, is my most favorite thing in the world. Nothing like a flame grilled piece of meat, it takes the cup EVERY TIME! My thing is, a braai/bbq is not complete without a good boere wors or sausage.
I love making my own meat marinades because i can talor it to my taste buds and you can make new sauce every time. So this pork marinade was a delight for me, it's simple and straight to the point and with a little bit of patience, that piece of meat will be like walking on cloud 9!
Braai is a tradition in South Africa, every other Holiday, there has to be a braai - Easter holidays, June 16, Heritage day, Christmas day, New Years eve/ days.... you name them, but a braai is what makes people come together and celebrate!

- [ ] 2 Tbsp Honey
- [ ] 3 Tbsp Soy Sauce

- [ ] 4 Tbsp Fresh Lemon Juice
- [ ] 1 Tbsp Black pepper

MAN Size Sosatie/Kebab
Man size Sosatie or Kebab.
Made from a selections of meat cuts.
Lamb, Pork neck, Chicken fillet and Rump
add some green and red pepper, a pickled onion or two
and a couple of mushrooms.
Top that off with a mild Peri Peri sauce and you are in Sosatie heaven.
All that you need is a Braai and some liquid refreshments and you are good to go.

Tender cubes of lamb, marinated overnight in a delicious sweet and tangy sosatie sauce, skewered with fresh bell peppers and sweet onions. Cooked over the braai for the best flavor! Enjoy it on its own, or with a soft, quick, and easy flatbread.

Recipe (Serves 5 people)
∙ 1KG Lamb
∙ 5 skewers
∙ 4 bell peppers (alternate the peppers on the sosatie for great color)
∙ Marinade
∙ ½ cup canola oil
∙ 1 ½ teaspoon cumin
∙ 1 tablespoon mild curry powder
∙ 1 tablespoon garlic flakes
∙ ½ teaspoon allspice
∙ 2 tablespoons turmeric
∙ 1 tablespoon black pepper
∙ 1½ teaspoon ginger
∙ 1 tablespoon spicy curry powder
∙ 1 tablespoon salt
∙ ¼ cup mango atchar
∙ ½ cup brown vinegar
∙ ½ cup Apricot jam
Marinate the meat for at least 12 - 24 hours
Easy Flatbread recipe
∙ 1 cup lukewarm water
∙ 1 cup lukewarm milk
∙ 1 tablespoon sugar
∙ 10g instant dry yeast
∙ 5 tablespoons oil
∙ 4 cups cake flour
∙ ½ tablespoon salt
Yogurt sauce
∙ 1 cup of full cream yogurt
∙ pinch of salt
∙ pinch of black pepper
∙ 1 tablespoon fresh green onions.
lightly oil the pan before cooking the flatbread. Cook on medium heat. Turn as soon as the dough starts puffing up and the dough is a nice golden color. ( 2-3 minutes each side)
