1/4 tsp black pepper powder
1 tsp chicken powder
1 tsp flour
1/2 tsp salt

1 tsp cooking oil

So in my previous video, I made a whole bunch of dumplings, a lot of which ended up in the freezer as frozen dumplings... which means... for the next few days... my many meals were all frozen dumplings.
Now i know, that seems boring right, to have frozen dumplings for every meal - but nah ah, not for this video, because i show you 7 new ways that you can enjoy these frozen dumplings. Much like my spam video, where i made 7 dishes out of just one can of spam, i was able to make over 7 dishes just from my batch of frozen dumplings.
Alright so these are the frozen dumpling dishes and recipes in order of what was shown in the video:
1. Steamed & Boiled Dumplings Recipe
Frozen Dumpling used: Pork & veg Dumpling
We are starting off easy, these are dumpling dishes you typically see on a menu in a Chinese Restaurant. If you want your dumplings in its cleanest and purest form, this is for ya!
And of course we gotta dip it in our dumpling sauce concoction of 1 part soy sauce, 1 part vinegar and 1 part sesame oil (can't go wrong with that)
2. Frozen Pan-fry dumplings / frozen gyoza recipe
Frozen Dumpling used: Pork & veg Dumpling
- 500ml water
- 100g flour
- 60g oil
- pinch of salt
Mix that together and use it as your dumpling batter to create the most crispy dumpling base.
3. Frozen Dumpling Soup
Frozen Dumpling used: Shanghai wonton (pork & vegetable)
Broth:
1 cup water
1 cup chicken broth
half a cup of carrots
half a cup of wambok
2 x slices of ginger
4. Frozen Dumpling Noodle Soup
Frozen Dumpling used: Shanghai wonton (pork & vegetable)
Broth (same as above)
Noodles: vermicelli - but you can use whatever you want
5. Wonton in Chilli Oil & Vinegar/ Sichuan Spicy Wonton in Red Oil
(红油抄手 - Hong You Chao Sou)
Frozen Dumpling used: Shanghai wonton (pork & vegetable)
Sauce mix:
1 tablespoon vinegar
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1 clove chopped garlic
handful of spring onions & cilantro
Chilli Oil (amount to your preference)
6. Fried Wontons
Frozen Dumpling used: Cantonese wontons (pork & prawn)
tip: make sure you drop a piece of the egg pastry into the oil; once that floats to the top, your oil is at the right temp
7. Wonton Dry Noodles (wonton Lo Mein)
Frozen Dumpling used: Cantonese wontons (pork & prawn)
Soup noodles:
Broth
1 cup water
1 cup chicken broth
half a cup of carrots
half a cup of wambok
2 x slices of ginger
1 tablespoon soy suace
1 tablespoon fish sauce
Wonton Lo Mein
Sauce mix:
1 tablespoon soy sauce
1 tablespoon oyster sauce 1
1 teaspoon dark soy sauce

Make Your Frozen Dumplings Super Crispy with this Easy Hack
We all love dumplings and we hope that you have stocked some up for your quarantine at home. It's easy, flavorful and so comforting. Take your frozen (or fresh) dumplings to the next level by giving it a crispy lattice web bottom with this easy hack.
We also made a quick dumpling sauce to accompany these tasty potstickers. You only need your basic Chinese condiments and it is tangy, savory, sweet and umami at the same time.
Crispy web bottom:
- 1 tbsp corn starch
- 1/2 cup cold water
- 2 tablespoons Oil
- ~15-20 dumplings
Simple dumpling sauce
- 2 tsp Chinkiang vinegar
- 2 tsp soy sauce
- 1/2 tsp sugar
- 1/4 tsp sesame oil
- Hot chili oil to taste

- Heat a 9 non-stick frying pan on medium heat
- Immediately place your dumplings around the outside first working your way to the center. A 9 pan fits about 15-20
- Add 1/2 cup of cold water to the corn starch and mix well. The water should come approximately 1/4 way up the dumplings. Keep this in mind if you're using a larger frying pan.
- Pour into the pan and cover.
- Allow the water to evaporate. Once the sound changes, and you hear sizzling you can remove the lid.
- Watching carefully, allow the crust to form and turn golden brown. Move the pan around the heat to ensure that you have even browning all the way around.
- To remove from pan, use a spatula to release the edge. Carefully slide or flip onto a plate.
- For the sauce, in a bowl add all the ingredients and stir. Adjust to taste.

Dumpling Dough:
- 1 package CIRCULAR gyoza wrappers
OR
- 1.5 cups (225g) all purpose flour
- .5 cup (75g) bread flour
- 2/3 cup (147g) water, boiling
- 1/2 teaspoon (2g) kosher salt (for dissolving in water)
- corn starch for rolling
Filling and Assembly:
- 1 lb (450g) ground pork
- 3 cabbage leaves, finely chopped
- 3 green oinons, very thinly sliced
- 3 cloves garlic, finly chopped
- 1 inch knob ginger, grated
- 1 tablespooon (14g) soy sauce
- 1 teaspoon (4g) sesame oil *optional*
- 1/4 teaspoon (2g) of fine sea salt
- 1/2 teaspoon (3g) sugar
Dipping Sauce:
- 1/4 cup (60ml) white distilled vinegar
- 1/4 cup (60ml) soy sauce
- 1 teaspoon sesame or chili oil *optional
Skirt Method:
- 1/2 cup (118g) water
- 2 tablespoons (19g) all purpose flour
