How To make Pumpkin Doughnuts
2 Eggs -- beaten
1 c Sugar
2 tb Oil
1/2 c Buttermilk
1 c Pumpkin, canned
4 c Flour
2 ts Salt
4 ts Baking powder
1/2 ts Baking soda
1 t Nutmeg
1/2 ts Cinnamon
1/4 ts Ground ginger
Sugar for coating
Beat eggs and sugar until light and fluffy. Add oil, pumpkin and buttermilk. Mix dry ingredients together and add to egg mixture. Chill 1 hour. Turn out on floured board and roll to 1/2 inch thickness. Cut with a doughnut cutter. Deep fry (375-degrees) until brown on one side. Turn over. Brown other side. Drain well on paper towels and roll in sugar. Recipe By :

Easy Cinnamon Sugar Mini Pumpkin Donuts!
Enjoy moist and fluffy baked pumpkin donuts coated in crispy cinnamon sugar - the ideal autumn breakfast or snack! They're not fried and ready in just 20 minutes!

INGREDIENTS:
For the donuts:
• 1 1/4 cups sifted soft white wheat pastry flour (
• 1/2 cup organic coconut sugar (
• 1/2 tsp sea salt (
• 1 tsp baking powder
• 1/2 tsp pumpkin spice
• 1/4 cup pumpkin puree
• 2 1/2 tbsp unsalted butter, melted
• 1/2 cup milk (any type will do)
• organic virgin coconut oil for greasing a doughnut pan (
For the cinnamon sugar coating:
• 3 tbsp unsalted butter, melted
• 1 cup of organic coconut sugar
• 1 1/2 tbsp organic ground cinnamon (
INSTRUCTIONS:
1. Preheat your oven to 350°F.
2. Grease a doughnut pan generously with melted coconut oil and set it aside.
3. In a large bowl, whisk together the dry ingredients. In a separate bowl, whisk together the pumpkin puree, melted butter, and milk. Carefully fold the wet mixture into the dry mixture.
4. Spoon the mixture into the prepared doughnut pan (you can use a piping bag), and bake for 10-15 minutes. Allow the doughnuts to cool in the pan for a few minutes.
5. While the doughnuts cool, melt the butter for the cinnamon sugar coating and set it aside. Mix the coconut sugar and cinnamon in a medium-sized bowl and set it aside as well.
6. Once the doughnuts are cool enough to handle, dip them in the melted butter, then roll them in the cinnamon-sugar mixture. Repeat until all the doughnuts are coated.
7. Enjoy your delicious baked pumpkin donuts!

It's not truly fall until you bake up a batch of these Baked Pumpkin Donuts! Easy enough to make for a weekday breakfast, and delicious enough to eat all fall long!
Ingredients:
Donuts:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon baking soda
1/4 teaspoon ginger
1 cup pumpkin puree
1/2 cup brown sugar
1/4 cup butter, at room temperature
2 eggs
2 tablespoons milk
1 teaspoon vanilla extract
Maple-Cinnamon Glaze:
1 1/2 cups powdered sugar
2 tablespoons milk
1/2 teaspoon maple extract
1/2 teaspoon cinnamon
