How To make Ranchera Sauce
1 tb Lard; or salad oil
1 Cl Garlic; pureed
1 qt Water
Ranchera roux 1 c Tomato paste
3 tb Lard; or salad oil
2 3/4 tb Chicken base
3 tb Flour; all purpose
1/4 tb Salt
1 tb Garlic powder
1 tb Cumin
1/2 Brown onion
1 pn Marjoram; ground
1 Bell pepper chopped
1 pn Basil
2 Celery chopped
1 pn Bay leaf; ground
1. HEAT THE LARD IN A STOCK POT, ADD THE GARLIC AND SAUTE OVER MEDIUM HEAT
UNTIL LIGHT brOWN (ABOUT 5 MIN.). ADD THE WATER. 2. ADD THE TOMATO PASTE, CHICKEN BASE, SALT AND SPICES, STIRRING UNTIL THE TOMATO PASTE IS COMPLETELY DISSOLVED. brING TO A BOIL AND SIMMER ON LOW ABOUT 20 MIN. RANCHERA ROUX: WHEN THE SAUCE HAS ALMOST FINISHED SIMMERING, MELT THE LARD IN A SAUCEPAN AND ADD THE FLOUR, STIRRING CONSTANTLY OVER MED. HEAT UNTIL THE MIXTURE IS LIGHT brOWN (ABOUT 5 MIN.) WHEN THE SAUCE HAS FINISHED SIMMERING, SLOWLY ADD THE ROUX TO THE SAUCE, WHIPPING CONSTANTLY TO DISSOLVE THE ROUX INTO THE SAUCE WITHOUT LUMPING. aDD THE VEGETABLES AND RETURN THE SAUCE TO A BOIL. SIMMER 20 MIN. OVER LOW HEAT. GOOD ON THE RICE AND OTHER MEXICAN DISHES.

We love enchiladas, especially at our favorite Mexican restaurant. However, we've never had any success at purchasing ranchero sauce from the store and enjoying the taste. They tend to have a funky aftertaste or just have something off in the general flavor of it. My wife came across this recipe some time ago and it is certainly a hit! Super easy to make too.

3 Tbl Olive Oil
3 Tbl Quick Mixing Flour
1 Tbl Chili Powder
1 Tsp Cumin
1/2 Tsp Garlic Powder

2 Cups Chicken Stock

Salsa Verde
2 lbs Tomatillos, rough chop
3 each Serrano Peppers
1 bunch Cilantro
2 Tbl Lime juice
1 tsp Salt
Place all the ingredients in a food processor or blender and puree
Ranchero Sauce
2 pounds tomatoes fresh, whole
2 each white onions, quartered
4 each garlic cloves
5 each serrano pepper
1 cup water
salt, to taste
pepper,to taste
comino, to taste
In a small sauce pan, add water, tomatoes, garlic, onions and chiles. Bring to a simmer, cook till tomatoes are soft. Puree in a blender. Add salt, pepper and comino to taste.
Zesty Ranchero Sauce - Chili Pepper Madness
This is the best ranchero sauce recipe I have ever tasted, with a base of diced tomato, jalapeno and onion, seasoned with a mixture of chili powders and seasonings. Perfect on huevos rancheros or any Mexican or Tex Mex dish.

Zesty Ranchero Sauce Recipe - How to Make Ranchero Sauce
Ingredients
1 tablespoon olive oil
1 medium yellow onion chopped
2 jalapeno peppers chopped
4 cloves garlic chopped
16 ounce can diced tomatoes
1 cup chicken broth
¼ cup chopped cilantro or more as desired
1 tablespoon ancho powder
1 tablespoon guajillo powder
1 tablespoon chipotle powder
1 teaspoon cayenne
1 teaspoon Mexican oregano
1 teaspoon cumin
Salt and pepper to taste
Juice from 1 lime optional
Cooking Directions
Heat a large pan to medium-high heat and add the olive oil.
Cook the onions and peppers down about 5 minutes to soften.
Add the garlic and cook another minute, stirring a bit.
Add the tomato and chicken broth. Stir.
Stir in the cilantro and seasonings.
Bring to a quick boil then reduce the heat and simmer for 20-25 minutes to let the flavors develop. The sauce will thicken up for you.
Transfer the mixture to a blender or food processor and pour in the lime juice. I used my stick blender.
Process until nice and smooth.
Use immediately or store in the refrigerator in a covered glass container.
