How To make Rhubarb Bread
-Source: brEAD1.ZIP 1 1/2 c Diced rhubarb stalks
1 c Sugar
3/4 c Butter
1 c Brown sugar
4 -eggs
2 1/2 c All-purpose flour
1 t Baking soda
1 t Baking powder
1 c Milk
1 t Vinegar
1 t Vanilla extract
1 c Chopped nuts
Sprinkle the sugar over the rhubarb; set aside. Cream the butter with the brown sugar and beat in the eggs until mixture is light and fluffy. Mix the flour with the baking soda and baking powder; set aside. Add vinegar to milk and let stand for 10 minutes; set aside. Add flour and milk, alternately, to the egg mixture. Stir in vanilla, nuts and rhubarb. Pour into two greased 9 x 5 x 3" loaf pans. Bake @ 325 degrees for 45 to 60 minutes. Turn out on a rack to cool. Converted by MMCONV vers. 1.00

EASY & DELICIOUS RHUBARB BREAD RECIPE | JAMIE SCHROEDER
Hi all! Showing you step by step how I make delicious rhubarb bread. Hope you enjoy.
RHUBARB BREAD RECIPE
1 1/2 c light brown sugar
2/3 c oil
1 tsp vanilla
1 egg
1 c buttermilk
2 1/2 c flour
1 tsp baking soda
1 tsp salt
1 1/2 c chopped rhubarb
CINNAMON CRUMBLE TOPPING
1/4 - 1/2 c light brown sugar
1 tbps butter
Preheat oven to 325 F. Mix flour, baking soda, & salt. In a separate bowl mix together brown sugar, oil, vanilla, egg, & buttermilk. Slowly add the dry ingredients into the wet ingredients and mix only until combined - do not over mix batter. Once combined, fold in chopped rhubarb. Pour into greased bread pan.
To make the cinnamon crumble topping, dice 1 tbps of butter and mix with 1/2 c brown sugar until crumbly. Pour evenly on top of batter.
Bake for roughly 60 minutes or when a toothpick comes out clean at 325 degrees F. Let sit 30 minutes to cool before slicing.

Are you a rhubarb lover? Even if you aren’t, you should try this bread. Once baked, the rhubarb is very subtle, but gives such a delicious flavor to this easy quick-bread. And it’s a great way to use up all the rhubarb from your garden--or in my case, my in-laws garden.
