How To make Rhubarb Nut Muffins
Muffin Mix:
1 1/2 Cups All-Purpose Flour
3/4 Cup Packed Brown Sugar
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/3 Cup Vegetable Oil
1 Egg Lightly Beaten
1/2 Cup Buttermilk
1 Teaspoon Vanilla Extract
1 Cup Rhubarb :
Diced
1/2 Cup Chopped Walnuts
Topping:
1/4 Cup Packed Brown Sugar
1/4 Cup Chopped Walnuts
1/2 Teaspoon Cinnamon
In a large mixing bowl, combine flour, brown sugar, baking soda and salt. Combi ne oil, egg, buttermilk, and vanilla; stir into dry ingredients just until mois tened. Fold in rhubarb and walnuts. Fill greased or paper-lined muffins cups tw o-thirds full. Combine topping ingredients; sprinkle over muffins. Bake at 3750 F for 20-25 minutes or until muffins test done. Cool 10 minutes before removin g to a wire rack. Yields 10 muffins.

Strawberry Muffins

Yield: 16 to 18 mufins
Ingredients
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/2 tablespoons ground cinnamon
1 1/4 cups milk
2 extra-large eggs, lightly beaten
1/2 pound (2 sticks) unsalted butter, melted
2 cups diced fresh strawberries
1 1/2 cups sugar
Directions
Preheat the oven to 375 degrees. Line muffin tins with paper liners.
Sift the flour, baking powder, baking soda, salt, and cinnamon together in a large bowl. Stir with your hand to be sure the ingredients are combined. In a 2-cup glass measure, combine the milk, eggs, and melted butter. Make a well in the middle of the dry mixture, pour the wet mixture into the well, and stir until just combined. There will be some lumps but don't overmix the batter! Add the strawberries and sugar and stir gently to combine.
Using a 2 1/4-inch ice cream scoop, spoon the batter into the muffin cups to fill the liners. Bake for 20 to 25 minutes, until a cake tester comes out clean and the tops are nicely browned.

Muffin Recipe - Create Different Flavors Using 1 Recipe
Learn how to make fluffy different flavored muffins using one recipe!
I'm going to be making blueberry muffins, white chocolate raspberry muffins and basic chocolate chip muffins , but feel free to add whatever you want to your batter!

- 90 gr Butter
- 2 Eggs
- 240 gr Buttermilk ( Or milk + 1 tbsp vinegar)
- 2 1/2 tsp Baking Powder
- 200-250 gr of Fresh Fruit, Chocolate Chips, Nuts.
- Flavorings( Vanilla, lemon zest, orange zest, cinnamon)
NOTE:
I filled my muffin liners all the way to the top(to get high muffin tops). If you're filling your liners only half way adjust the baking time(Check them after 20 min).

- 1 cup Buttermilk ( Or milk + 1 tbsp vinegar)

- Anywhere between 1 1/2 -1 3/4 cups of Fresh Fruit, Chocolate Chips, Nuts.
- Flavorings( Vanilla, lemon zest, orange zest, cinnamon)
NOTE:
I filled my muffin liners all the way to the top(to get high muffin tops). If you're filling your liners only half way adjust the baking time(Check them after 20 min).
