3 slices day old bread
cubed
1/2 c. shredded Cheddar cheese
3 eggs
3/4 c. milk
1/2 tsp. prepared mustard
1/4 tsp. salt
1 Dash pepper

*VARIATIONS:-- 1/3 lb. browned sliced sausage
1 c. cubed ham
1 c. dried beef
Grease 1 quart baking dish. Toss bread cubes and cheese in dish.* Beat eggs, milk, mustard, salt and pepper together and pour over bread and cheese. Cover and refrigerate several hours or overnight. Bake covered at 350 for 45-50 minutes until golden brown. (Add to bread and cheese)

Spicy Sausage Breakfast Casserole -
Ingredients
1 pound package pork breakfast sausage, regular or spicy
1 (8-ounce) tube refrigerated crescent rolls
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
6 large eggs
1 cup milk
1-2 tablespoons hot sauce sauce
1/2 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 375 degrees and grease a 13x9-inch pan.
Cook sausage in a nonstick pan, crumbling it with a wooden spoon. Drain.
Unroll crescent roll dough in prepared pan, sealing the seams.
Sprinkle sausage and cheese on top of dough.
Whisk together eggs, milk, Tabasco sauce, salt, and pepper. Pour over sausage and cheese.
Bake 35 to 40 minutes

Greet the day with these cheerful breakfast cups! Each mini casserole combines your morning favorites, like Eckrich® Smoked Sausage, cheesy eggs and potatoes, into convenient
single-serving portions.
Ingredients
● 2 (10- or 14-oz.) packages Eckrich® Smoked Sausage, diced
● 1 tablespoon olive oil
● 6 green onions, trimmed and sliced thin
● 3 cups baby spinach
● 12 large eggs
● 1 cup milk
● 1 cup shredded cheddar cheese
● 1/2 teaspoon kosher salt
● 1/2 teaspoon black pepper
● 12 frozen smiley-face mashed potato fries
Preparation
1. PREHEAT oven to 350°F. Coat a 12-cup muffin tin with nonstick cooking spray.
2. HEAT oil in large skillet over medium-high heat. While oil is heating, slice sausages in half lengthwise, then slice sausage into 1/4-thick half moons. Add to pan and cook until crisped, about 5 minutes. Stir in green onions and spinach and cook until wilted. Divide sausage mixture evenly among 12 muffin cups.
3. WHISK together eggs, milk, salt and pepper until combined. Mix in cheese and divide mixture evenly, scooping into muffin cups. Top each muffin cup with one smiley-face fry.
4. BAKE 15-18 minutes, until eggs are cooked through and fry is crisp. Let cook in muffin tin 5 minutes before removing.
