Salmon Balls
One of the best appetizers you will ever make!
Ingredients:
Salmon Bake
Large Salmon Fillet
1 Tsp Old Bay Seasoning
1 Tsp Granulated Garlic
1 Tsp Lemon Pepper
½ Tsp Paprika
½ Tsp Onion Powder
½ Tsp Black Pepper
Dry Herb Blend
Salmon Ball Batter
1 Cup Mayonnaise
1 Cup Bread Crumbs
2 Tbsp Dijon Mustard
2 Tbsp Old Bay Seasoning
2 Tbsp Worcestershire Sauce
1 Tsp Chili Garlic Sauce
2 Eggs
Juice of 1 Lemon
Dipping Sauce
2 Tbsp Mayonnaise
½ Tbsp Old Bay Seasoning
½ Tsp Paprika
1 Tsp Sweet Relish
½ Tsp Garlic Powder
1 Tbsp Honey
½ Tsp Sriracha Sauce
Juice of 1 Lemon
Preparation of Salmon:
In a small bowl, mix together all dry ingredients except the dry herb blend.
With salmon prepped and cleaned, apply a liberal amount of dry seasoning mix to salmon and press firmly into salmon.
Apply a liberal amount of the dry herb blend to salmon and press into salmon flesh.
Let salmon marinate for about an hour to allow seasoning to absorb into meat.
Preheat oven to 350 degrees.
Place salmon on baking sheet and cook for 15 minutes.
Take salmon out of oven and let cool.
Salmon Balls:
In a large bowl, mix together mayonnaise and eggs and whisk until smooth.
Add mustard, Old Bay Seasoning, Worcestershire sauce, Chili Garlic sauce, lemon juice to mixture and whisk until well blended.
Carefully add salmon to mixture. Make sure to remove salmon skin before adding.
Add bread crumbs to mixture and blend well.
Let salmon batter set for 30 minutes to allow bread crumbs to fully absorb into mixture.
With a hushpuppy scooper, scoop out some salmon batter.
Place into your hand and roll until smooth.
Place ball onto a large baking sheet.
Repeat until all mixture is used, placing balls about 1 inch apart.
Place baking sheet into a 400 degrees preheated oven for about 15 minutes or until golden brown.
Dipping Sauce:
In a small bowl, all ingredients and blend together until smooth.
Add more honey or sriracha for desired sweetness or heat.

Ingredients for Salmon Patties:
►1 lb fresh salmon filet
►Olive oil
►Garlic salt (I used Lawry's Brand), to taste
►Black pepper, to taste
►1 medium yellow onion (1 cup), finely diced
►1/2 red bell pepper, seeded and diced
►3 Tbsp unsalted butter, divided
►1 cup Panko bread crumbs
►2 large eggs, lightly beaten
►3 Tbsp mayonnaise
►1 tsp Worcestershire sauce
►1/4 cup parsley, finely minced
