2 c Salmon (drained) 1 pk Cream cheese (8 oz.) 1 tb Chopped onion 1/2 ts Salt 1 tb Lemon juice 1 ts Horseradish mustard Mix together and form into ball on wax paper. Chill in refrigerator for 4 hours. Crush 1/2 cup of pecans and 3 tablespoons of parsley flakes. Roll ball in mixture.

METHOD
Cook the potatoes, let them cool and grate in the bowl.
Mix the potatoes with the yolk, flour, parsley, salt and pepper.
Add salmon and mix.
Form balls and roll them in breadcrumbs. Fry in hot oil and serve.

DIRECTIONS
Place two slices of smoked salmon on a sheet of plastic wrap. Spread the cream cheese over the slices of smoked salmon, top with lemon zest, arugula and pitted black olives. With the help of the plastic wrap, shape the salmon into a ball. Refrigerate for at least two hours. Add more lemon zest before serving.
You can also make smaller balls to serve as a starter or enjoy as a snack!

I've never tasted or made a salmon food recipe that I did not absolutely love. Guys and this recipe here is no different and does not disappoint any of my salmon lovers. The Dijon Lemon Sauce gives it the added flavor to knock this baked salmon out of the park.

FRIED SALMON BALLS (FRIDAY NIGHT FISH)
Ingredients;
3 - 5 Baked Salmon Filets 1 Small Onion (You could add bell peppers also) 3 Tbsp of Self-Rising Flour 3 Tbsp of Mayonnaise Seasonings of Choice
*For Dredging* 1 Cup of Plain Yellow Cornmeal 1/2 Cup of Self-Rising Flour
Directions 1. Break salmon down into small pieces using a fork. 2. Add all other ingredients and mix well. 3. Using a cookie scoop or spoon, form mixture into balls and dredge into cornmeal and flour mixture. 4. Add balls to pre-heated grease and fry until golden brown. 5. Serve with tarter sauce or your favorite condiment. Enjoy!
