How To make Sambar
3/4 c Toor Dhal
1/2 ts Ground Turmeric
3 tb Vegetable Oil
1 c Shallots
peeled *
1 md Potato :
peeled & diced
1 Tomato diced
4 tb Tamarind Paste :

Note 1 1/2 ts Salt
2 tb Sambar Powder * see
Recipe 1/2 ts Whole Black Mustard
1/2 ts Cumin Seeds
1/2 ts Coriander Seeds
1 Red Dried Chillies :
Crushed 1/2 c Fresh Cilantro
* I use one medium sized onion peeled and chopped because I don't like shallots. ** if you can get tamarind use it and soak a fistfull in water for half hour and then squeeze the "juice" out and discard the waste and use the juice in the sambar. Soak toor dhal in 4 cups water for one hour in a heavy-based pot. During this time chop the onions (if you use instead of shallots), potato and tomato (green beans and carrots may also be added). Add the turmeric powder to the soaking dhal and place on stove. Bring to boil, lower heat to keep the dhal simmering. Close pot and allow dhal to cook till tender. Soaking dhal before cooking consideraby lowers the cooking time which is about 30-45 minutes. Stir a few time to keep dhal from sticking at the bottom. While dhal is cooking lightly fry the onions or shallots in 2.5 tab. vegetable oil. Do not allow the onion/shallots to brown. When dhal has cooked add some more water to bring the water level up to 4-5 cups again (use your judgement here because I cannot be more precise!). Now add the potatoes, tomato, sauted onions/shallots, and any other vegetables to want to put in. Next add the tamarind paste (or tamarind "juice"), and sambar powder. Stir and bring to a simmer. Cover and allow the cook until vegetables are tender (about 15 minutes) and keep stirring occassionally. Heat the remaining 1/2 tab. oil and add the mustard, cumin, coriander seeds and the crushed red chillie to the hot oil. As soon as the mustard seeds begin to pop stir the whole thing once and add to the cooking sambar. Finally add the cilantro leaves and cook for another 5 minutes and remove from stove. The consistency should be like a thin soup and the sambar powder should not appear like dirt sticking to the veggies (you will see this happen initially). You may also add some green chillies if you like to add more "zip" to the sambar. If so add it with the rest of the veggies. Sambar can be eaten with plain cooked rice, idlies (I know I owe you all this recipe!) or dhosas. Sambar is an integral part of South Indian cooking. It is made every day. As I mentioned in San Antonio a visiting naturalist from the Smithsonian Institute described a South Indian meal thus: mountain of rice and river of sambar! Recipe By : Ramesh

Pigeon Pea (Toor Dal / തുവരപ്പരിപ്പ്) - ¾ Cup
Turmeric Powder (മഞ്ഞള്പൊടി) - 1 Teaspoon
Water (വെള്ളം) - 6 Cups (1.5 ltr)
Elephant Foot Yam (ചേന)
Raw Plantain (നേന്ത്രക്കായ്)
Pumpkin (മത്തങ്ങ)
Yellow Cucumber (വെള്ളരിയ്ക്ക)
Drumstick (മുരിങ്ങക്കായ്)
Snake Gourd (പടവലങ്ങ)
Brinjal (വഴുതനങ്ങ)
Carrot (കാരറ്റ്)
Ivy Gourd (കോവയ്ക്ക)
Long Beans (പച്ചപ്പയർ)
Shallots (ചെറിയ ഉള്ളി) - 10 Nos
Green Chilli (പച്ചമുളക്) - 2 Nos
Curry Leaves (കറിവേപ്പില) - 4 Sprigs
Okra / Lady’s Finger (വെണ്ടയ്ക്ക) - 2 Nos
Coriander Powder (മല്ലിപ്പൊടി) - 3½ Tablespoons
Chilli Powder (മുളകുപൊടി) - 1 Tablespoon
Asafoetida Powder (കായപ്പൊടി) - 2 Teaspoons
Salt (ഉപ്പ്) - 3½ Teaspoon
Tamarind (പുളി) - Gooseberry (നെല്ലിക്ക) sized ball
Tomato (തക്കാളി) - 1 No
Coriander Leaves (മല്ലിയില)
Coconut Oil (വെളിച്ചെണ്ണ) - 3½ Tablespoon
Mustard Seeds (കടുക്) - ½ Teaspoon
Garlic (വെളുത്തുള്ളി) - 5 Cloves

Sadya is incomplete without our sambar ..So dears, here comes an easy recipe ..
Ingredients
Chana Da or Toor Dal l - 1/2 cup
Turmeric powder - 1/4 tsp
Onion - 1 small or 1/2 of 1 medium
Asafoetida -1 small piece (or) 1 tsp powder
Carrot - 1/2
Pumpkin - 4 to 5 pieces
Cucumber - 4 to 5 pieces
Cluster beans - 4
Yam - 4 to 5 pieces
Drumstick - 1
Tamarind - lemon size
Shallots -15
Garlic-1 clove
Green chilli - 2
Tomato - 1 medium
Ladies finger - 4
Curry leaves - 1string
Sambar powder - 2 1/2 tbsp
Chilli powder - 1/2 tsp
Coriander powder -1 tsp
Asafoetida powder - 2 pinch
Fenugreek powder - 2 pinch
Coconut oil-1 tbsp
Salt
Water
For seasoning
Mustard seeds -1/4tsp
Fenugreek seeds - 2 pinch
Dry red chilli - 3 to 4
Curry leaves - 1string
Sambar powder- 1/2tbsp
Method
Wash and soak the tamarind in water
U can Soak dal for 1 hour and pressure cook by adding enough water ,turmeric powder,asafoetida ,salt and all the vegetables except ladiesfinger,tomato and shallots.
Cook for 1 whistle in medium flame.(if the dal is not cooked ,cook until cooked well )
Then open the cooker ..
Meanwhile heat 1 tsp of coconut oil and saute shallots and garlic till it become transparent.
Reduce the flame and add turmeric powder,chilli powder,coriander powder.
When the raw smell goes,add 2 tbsp of sambar powder
Keep the remaining 1/2tbsp aside
Saute till the raw smell goes
Add fenugreek powder and asafoetida powder
Add plenty of curry leaves
Keep them aside
Open the cooker after releasing the pressure and add tamarind water,roasted onion mix,tomato,ladies finger,green chilli and jaggery.
Add enough hot water,if required
Allow to boil for about 10 minutes in medium flame .
Check the salt and sourness ..
It should reduce its quantity by 1/4th of the total quantity
Now heat coconut oil ,add dry red chillies,splutter mustard seeds ,fenugreek seeds,curry leaves one by one and finally the remaining 1/2tbsp of sambar powder.
Turn off the gas and add the seasoning into the sambar
Mix well and close the cooker for few minutes.
Do not put the weight on the lid.
So the easy and tasty Sambar is ready to serve
