Bacon and Cheese Scones Recipe Demonstration - Joyofbaking.com
Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make Bacon and Cheese Scones. This savory scone is packed with bits of bacon, cheese, and chives. It is delicious on its own or cut in half and spread with butter. Makes a great accompaniment to soups and stews. Sometimes I use this scone to make a Breakfast Biscuit. Just cut the scone in half and fill it with a fried egg. You can also add a slice of tomato, a slice of avocado, and/or some lettuce.

CHEESE SCONES RECIPE
Ingredients
3 Cups / 375g Flour
2 Tbsp Baking Powder
1 tsp Salt
1/4 tsp Cayenne Pepper
60g / 1/4 Cup / 1/2 Stick Butter
1 1/2 Cups / 150g Cheddar Cheese
1 Cup / 250ml Milk
Instructions
In a large mixing bowl add the dry ingredients, the flour, baking powder, salt and cayenne pepper. Use a wooden spoon to mix the ingredients together.
Cut your cold butter into small cubes. Add it to the dry ingredients and use your finger tips to work the butter into the flour. Alternately you can use a pastry cutter or a dough cutter but it’s just as effective with your hands.
When the butter has been combined well add your cheese to the mixture and mix it through with a wooden spoon. This is also the time to add any additional ingredients to the scones.
Pour in the milk and fold the scone dough together gently with a wooden spoon until it just starts to come together. Do not over mix!
Tip the scone dough out onto your work surface and fold it over itself a few times, incorporating any of the dry bits. We don’t want to knead it as that will make the scones tough.
Roughly shape the dough into a rectangle, about 20cm or 8″ long and 10cm or 4″ wide. It doesn’t need to be exact. Use a dough scraper or a knife to cut the dough into 6 or 8 scones.
Transfer the scones to a lined baking sheet. Use a pastry brush to brush milk over the tops of the scones and top with a little extra cheese.
Place the scones into a 220C° / 420F° oven for 20-25 minutes or until the scones have puffed up and turned a deep golden brown.
Let the scones cool fully on the baking sheet before serving with butter.

Cheese Scone Variations
There are so many different ingredients and flavours that can be added to these cheese scones. Here are a few of my favourites.
1/2 Cup Bacon Pieces
1/4 Cup of Sliced Olives, Jalapeños or Sun dried Tomatoes
1/4 Cup Feta Cheese
1/2 Cup Caramelized Onions
These ingredients can added at the same time as the cheese or 'sandwiched' in between the scone dough so they run through the center.
