1 T Nutritional yeast
1/2 t Marjoram
1/2 t Dried parsley
1/4 t Mustard powder
1/4 t Garlic salt (or salt), or to

This mashed pumpkin recipe is quite versatile. It can be served as a side dish with any protein. The leftovers can be used as topping for wraps or spread on toast with leftover meat or fried eggs for breakfast the next day. Add this curried mashed pumpkin to cooked oatmeal for a savory pumpkin oatmeal porridge.
This recipe is loosely adapted from “Mathanga Erissery”, a simple Indian mashed pumpkin recipe that uses pumpkin, coconut and a few spices. Disclaimer: carrots, onions, and fennel seeds are not part of the traditional dish. I’ve taken the liberty to add them for extra flavor and nutrition.
The main ingredients of this easy VEGAN PUMPKIN RECIPE – pumpkin, coconut, garlic and fennel seeds among other health benefits, help reduce bloating and aid digestion, which makes this recipe an absolute bloat-buster that helps in weight loss, especially during the holiday season when you tend to overeat. ???? Pumpkin and Kielbasa Sheet Pan:
1/2 cup chunked pumpkin
1/2 ear of corn cut into sticks
1/4 red onion (cubed)
1/2 bell pepper cubed
1/4 cup sliced kielbasa
1 Tbs garlic parmesian seasoning mix
2 Melted Margarine (or butter)
Salt and pepper to taste
Preheat oven to 400°F. Spread veggies and meat evenly on an oven safe pan, then combine the garlic parmesian seasoning with the melted butter. Use a pastry brush to brush everything with the seasoned butter. Add salt & pepper to your preference, bake at 400°F for 25 minutes.
???? Pumpkin Wild Rice Stir Fry:
1 box Uncle Ben's (or similar) wild rice with flavor packet box mix
1/4 cup chopped purple onion
1 cup chopped pumpkin
1/4 cup chopped green peppers
1/2 cup corn cut off the cob
1/2 cup kielbasa (finely chopped)
Prepare rice according to package. After it has cooked about 10 minutes add in remaining ingredients and stir. Continue to cook until rice & veggies are tender (about 10 more minutes). Serve! (Reserve about half for later meals if you're making all the recipes).
???? Wild Rice & Pumpkin Stuffed Peppers:
1 green bell pepper
1 tsp garlic parmesian seasoning
1 cup Pumpkin Wild Rice Stir Fry (see recipe above)
Cut the pepper in half and take out the seeds. Fill each half with rice stir fry, then sprinkle garlic parmesian on top. Cook in a 400°F oven for 25-30 min.
???? Giant Dumplings & Wild Rice With Pumpkin Cream Sauce:
Dumpling Dough -
5 cups flour
1/4 cup mashed pumpkin
2 cups warm water
1 tsp salt
Topping - 1 cup Pumpkin Wild Rice Stir Fry
Pumpkin Alfredo Sauce -
1 jar alfredo sauce
1/2 cup chopped purple onions
3 Tbs garlic parmesian seasoning
1/2 cup water
1/2 cup mashed pumpkin
Salt and pepper to taste
Combine dumpling dough ingredients until a sticky dough has formed. Heat a nonstick pan or griddle & spray lightly with oil. Spread 1/2 cup portions of the dumpling dough on the hot griddle (wet your spatula for easier spreading), & allow to cook until light brown then flip to brown on opposite side. Make 2 dumplings & set dough aside for other recipes. In a separate skillet, cook onions until slightly browned, then add remaining sauce ingredients and heat through. Add water to thin to desired thickness if the sauce thickens too much. Top each dumpling with 1/2 cup Pumpkin Wild Rice Stir Fry, & 1/4 cup Pumpkin Alfredo Sauce.
???? Bowtie Pasta With Pumpkin Alfredo Sauce and Kielbasa:
1/2 cup pumpkin Alfredo Sauce
1/4 sliced kielbasa (roasted in a pan)
1 Cup leftover dumpling dough
1/2 cup flour
Flour surface well, then roll out the dumpling dough. Add as much flour as needed to keep dough from sticking. Roll thinly, then cut squares out of the dough. Crimp the middle of each square to form a bow tie shape. Heat a pot of water with a pinch of salt in it. When boiling drop the pasta in water & cook about 8 minutes. Drain, then pour 1/2 cup Pumpkin Alfredo sauce and kielbasa on top.
???? Kielbasa Ravioli With Pumpkin Alfredo Sauce:
1/2 cup Pumpkin Alfredo Sauce
1 Cup leftover dumpling dough
1/2 cup flour
Flour surface well, then roll out the dumpling dough in rectangle. Place two vertical spaced out lines of kielbasa rounds on half the dough. Fold the sheet in half covering the rounds. Press down to seal around kielbasa, then use a pizza cutter to cut out squares. Heat a pot of water with a pinch of salt in it. When boiling drop the pasta in water & cook about 10 minutes. Drain, then pour 1/2 cup Pumpkin Alfredo sauce on top.
???? Alfredo Pumpkin Gnocchi with Kielbasa Octopuses:
2 kielbasa octopuses (roasted in a pan)
Gnocchi -
1/2 cup mashed pumpkin
1/2 cup flour (plus more if the mixed dough is too sticky to mold)
1 Cup of Dumpling Dough
Mix the cup of dumpling dough & mashed pumpkin. Add flour until dough is moldable. Roll small balls of dough into gnocchi shape then lay spread out on a sheet pan. Heat a pot of water with a pinch of salt in it. When boiling drop the gnocchi in water and cook until they rise to the surface. Drain, then pour 1/2 cup Pumpkin Alfredo sauce & place kielbasa octopuses on top.

Hi lovelies, do you like going to restaurants? I do less and less the more time passes. I guess the problem is that the more I learn to cook and bake myself, the harder it is to satisfy me???? So I very rearly get blown away by any food I eat out. However, there is one place here in Dortmund that has already inspired me for two different recipes. Last time I was there I tried their Pumpkin Curry Quiche and man it was so delicious! When I told about it to my boyfriend he was surprised and said it has been a long time he has heard that from me after I have been eating out???? I also decided then that I want to re-create this recipe and that is what I have for you today. This is a savory pumpkin recipe with a hint of curry and some pumpkin pie spice.
