How To make Scrumptious Banana Cake
2 1/2 Cups Flour,All-Purpose
1 2/3 Cups Sugar
1 1/4 Teaspoons Baking Powder
1 1/4 Teaspoons Baking Soda
1 Teaspoon Salt
2/3 Cup Vegetable Shortening
2/3 Cup Buttermilk,or sour milk
1 1/4 Cups Bananas,Mashed, about 3
2 Eggs,Large
2/3 Cup Walnuts,Black,Chopped
Sift together the dry ingredients. Add the shortening, milk and bananas. Beat for 2 minutes. Add eggs and beat for 2 minutes more. Add nuts and stir to blend. Pour into greased and floured 9x13x2-inch pan or into two 9-inch pans. Bake in preheated 350 degree oven 30-35 minutes for round pans, 45 minutes for larger pan. Cool and frost with a buttercream frosting. This cake was a second place winner at the Del Mar fair. Jo Anne Merrill

Scrumptious Banana bread!!
For this recipe you will need.
250g plain flour
250g sugar
200g unsalted butter(to be melted)plus a bit more to grease the cake tin.
3 large eggs
5 medium to large overripe bananas
3/4 tsp baking soda
3/4 tsp nutmeg
1 tsp salt
1 tsp baking powder
1 tsp vanilla extract.
Cinnamon/sugar 1 part to three.
Optional 1tbsp cinnamon to 3 tbsp sugar mix well and evenly sprinkle on top for a crunchy cinnamony top.
Pre heat your oven to 180°c, in your first bowl mix all dry ingredients evenly

Second bowl beat your three eggs and add four mashed bananas and vanilla extract Save one banana to slice as a garnish.
Fold wet with dry ingredients using a wooden spoon and slowly add melted butter till its all mixed in.
Grease your cake tin and pour in the mixture, add the optional topping and bake for 1 hour and 10 minutes. Its ready when a butter knife to the center comes out clean.

Eggless Banana Walnut Cake (Popularly known as Banana Bread)
Ingredients :
2 ripe Bananas
1/2 cup Oil (any odourless oil - alternatively vegetable oil / soya oil / ricebran oil / sunflower oil can be used)
1/2 tsp Vanilla Essence
1 tsp Cinnamon (Dalchini) Powder
3/4 cup Sugar (i.e half brown sugar and half white sugar or 3/4 cup only white sugar can also be used)
Pinch of Salt
3/4 cup Plain Flour
3/4 cup Wheat Flour
1 tsp Baking Powder
1 tsp Baking Soda
Chopped Walnuts
Method :
Take a mixing bowl, take 2 ripe Bananas
Mash them with the fork
Add 1/2 cup Oil (any odourless oil)
Add 1/2 tsp Vanilla Essence
Add 1 tsp Cinnamon (Dalchini) Powder
Add 3/4 cup Sugar
Add a pinch of Salt
Mix it well with the help of spoon
Further add 3/4 cup Plain Flour
Add 3/4 cup Wheat Flour
Add 1 tsp Baking Powder
Add 1 tsp Baking Soda
Add chopped Walnuts
Mix everything well with the help of spoon
Consistency of the batter should be sticky & thicker
Further for baking, take a baking loaf greased and lined with parchment paper
Pour the batter and top with some chopped Walnuts
Keep this loaf in preheated oven
Bake for 40 min at 180⁰
(To bake it on stove, pre-heat steamer along with a stand in it, place cake loaf in it, cover lid with a cloth and bake for 50-55 min)
Let it cool down and then slice it up
Take it on a serving plate & dust some iching sugar

INGREDIENTS
3 medium ripe bananas
1 egg
1/2 cup granulated sugar (100g)
1 tsp vanilla
1/3 cup melted butter (80g)
1 1/2 cups all-purpose flour (180g)
1 tsp cinnamon powder
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup additional add-ins (optional) chopped nuts, dried fruits, or chocolate chips
Bake at 350°F (180°C) for about 50-60 minutes or until a skewer comes out of the center clean.

• 130 g almond milk, unsweetend,
• 200 g ripe bananas, (approx. 2 bananas), cut into pieces
• 150g soft nectarines or pineapple
• 120 g pitted Dates
• 100g dried blueberries optional
• 2 eggs
• 220 g plain flour (mixed sorghum, rice, coconut flour)
• 50g traditional oats
• 2 tsp baking powder
• 5g cinnamon
• 1 pinch salt
• 1 tsp bicarbonate of soda
• 100 g almond milk or rice milk
• 2 tsp natural vanilla extract
• Walnuts and pepitas for garnish
Nutrition per 1 portion
Calories 600 kJ / 128 kcal
Protein 3.9 g
Carbohydrates 32.4 g
Fat 1.5 g

Preparation
1. Preheat oven to 180°C. Place baking paper on loaf tin (25 x 10 x 11 cm) and set aside.
2. Place ripe bananas and nectarines onto mixing bowl and mash and blend until smooth.
3. Add 130g almond milk and dates and mix. Scrape down sides of mixing bowl with spatula.
4. Add eggs and mix.
5. Add mixed flour blend, baking powder, oats, dried blueberries and additional almond milk and natural vanilla extract and combine for further 30 sec. a
6. Pour into prepared loaf tin, add crushed walnuts and pumpkin seeds and bake for 50-60 minutes (180°C) or until a wooden skewer inserted into the centre of the bread comes out clean.
7. Allow to cool in tin for 30 minutes before turning out onto a wire rack. Serve warm or allow to cool completely before transferring into a sealable container until ready to use.
