Ingredients and Directions for Fish Bratwurst / Fish Sausage Homemade:
General Information:
Portions: 10
Preparation: 45 minutes
Cooking-time: 10 minutes
Ingredients (US-Units):
Wild-salmon-filet: 1.1 pounds
Coalfish-filet: 1.1 pounds
Cod filet: 1.1 pounds
Sea Salt: 1 TBSP
Pepper: 1 tea spoon
Lemon juice: 1 squeeze
Dill: 1 batch
Tarragon: 1 batch
Parsley: 1 batch
Sausage skin: available at the butchery – order needed amount
Onions: 1
Ingredients (Rest of the World – Units):
Wild-salmon-filet: 500 g
Coalfish-filet: 500 g
Cod filet: 500 g
Sea Salt: 1 TBSP
Pepper: 1 tea spoon
Lemon juice: 1 squeeze
Dill: 1 batch
Tarragon: 1 batch
Parsley: 1 batch
Sausage skin: available at the butchery – order needed amount
Onions: 1
Preparation of food:
1. Leave the sausage skin in lukewarm water for around an hour (not above 40° Celsius - which is 100 degrees Fahrenheit -, this allows the natural casing to be more flexible which makes it easier to utilize)
2. Mince fish-filet with a knife.
3. Also, mince onions, parsley, tarragon. Then squeeze some lemon juice on top of it and squidge it into the fish mass including some sea-salt and some pepper. (Those who want can cook some of the fish-mass to taste test if it needs more spice.)
4. Afterwards, fill the sausage-filler with the fish-mass. Then cover the natural casing over the filler-pipe. Tie a knot in the end of the natural casing.
5. Carefully fill the casing with the fish-mass. Twist it off at the desired length.
6. You can cook the fish-bratwurst on the grill at medium heat or at the stove in a pan.

Ingredients (Grocery List)
1/4 cup butter
12 oz andouille sausage
1lb Ground Pork Sausage (regular or spicy)
1 lb shrimp
1 cup diced onion
1 cup diced celery
1 cup red bell pepper
1 Jalapeno
2 tsp minced garlic
2 tbs tomato paste
2 tsp Worcestershire sauce
4 cups stock (chicken or seafood)
2 cups medium grain rice
10 oz shredded chicken (optional substitution for pork sausage)
Cajun seasoning
Salt, pepper
Green onion
Parsley, rosemary, thyme, bay leaf
Directions:
Heat Dutch Oven and add ground sausage. Once ground sausage is broken up and starting to brown, add in andouille sausage and half of the butter, cook until completely browned, about 5 minutes. Remove the sausage with a slotted spoon.
Cook and stir onion, celery, and red pepper in the butter remaining in the pot until the onion becomes translucent, 5 to 10 minutes.
Stir garlic into the onion mixture; cook and stir together for 1 minute.
Add Chicken Base and mix to incorporate with the vegetable mixture; cook and stir another 3 to 5 minutes. (You can add tomato paste here too if you like)
Return andouille sausage to the pot along with your ground sausage, Worcestershire sauce, Cajun seasoning, and black pepper; stir to combine.
Stir rice into the mixture, then add your chicken stock and bring to a boil. Place a cover on the pot, reduce heat to simmer on medium-low, and cook until the rice is tender, 20-25 minutes. (Important: do not stir the rice too often. If you over-work the rice, it will lose it’s texture and become mushy. Keep the rice off the bottom of the pot occasionally to prevent burning, but do not over-stir the mixture)
Add shrimp at the end. Increase heat to medium-high and cook until the mixture comes to a boil; reduce heat again to medium-low and cook uncovered another 10 minutes, stirring occasionally. Add the remainder of your butter and any additional seasoning, (Cajun and/or cayenne to adjust heat as needed)
Garnish with chopped parsley and/or green onion.

Shrimp And Andouille Sausage Creole Recipe
Ingredients
1 1/2 - 2 pound jumbo shrimp
Andouille sausage or preferred
2 tablespoon olive oil
4 tablespoons butter
1 tablespoon garlic (minced garlic)
2 bay leaves
1 celery stalk diced
1/2 of each bell pepper green/red
1 green onion diced
One cup yellow onions diced
8-10 okras sliced
2 tablespoons parsley dried/fresh
1 teaspoon thyme
1 14.5 ounce canned tomatoes (diced)
1 medium tomato optional
2 cups stock chicken, seafood, or vegetable or substitute with bouillon and water as recommended in the video
1-2 tablespoon Louisiana hot sauce
2 tbsp Worcestershire sauce
1/4 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon white ground pepper
1/2 tsp creole seasoning
pinch of sugar (optional)
Directions
Add oil to a large saucepan or pot over medium-high heat.
Brown the sausages on both sides, remove and reserve for later.
Add 2 tbsps butter onions, green/red bell peppers, celery, and green onions to the pan.
Cook and stir occasionally until veggies start to soften.
Add minced garlic, combine, and cook until fragrant.
Add tomatoes, stock, hot sauce, Worcestershire sauce, bay leaves, parsley, white pepper, black pepper, cayenne pepper, creole seasoning, and thyme.
Bring to a boil, then reduce heat to a low simmer until sauce is slightly thickened.
Add the cooked sausage and shrimp.
Add the okras.
Remove and discard the bay leaves.
Add remaining butter for extra flavor and stir until completely melted.
Take a final taste test and add additional seasoning if necessary.
