Dehydrated and pickled jellyfish is considered a delicacy in several Asian countries, including China, Korea, Taiwan, Vietnam, and Japan. Dehydrated jellyfish can be prepared for eating by soaking it in water for several hours to rehydrate it, and then parboiling, rinsing and slicing it.
Whisk sesame oil, soy sauce, vinegar, sugar, chili oil, and ginger together in a small bowl; stir into jellyfish and marinate 15 minutes. Place sesame seeds in a dry skillet over medium-low heat; toast until golden, about 1 minute. Set aside to cool, about 5 minutes.

Start your meal with this traditional Chinese appetizer, the texture of jellyfish is wonderful!
Jellyfish with Shredded Chicken
INGREDIETNS:
2 pieces of Chicken Thigh
2 tbsp Cooking Wine (for the chicken thigh)
1 pack of Ready to Eat Jellyfish
1/3 Cucumber
Green Onion
Ginger, julienned
Coriander, julienned
Sauce:
3 tbsp Soy Sauce
2 tbsp Sesame Oil
½ tbsp White Wine Vinegar
2 tbsp Cooking Wine
½ tsp Salt
1 tsp Sugar
Sesame Seeds
PREPARATION:
1. Marinate the chicken thigh with 2 tbsp cooking wine and salt for at least 30 minutes. Steam the chicken thigh for 25-30 minutes. Put the cooked chicken thigh into ice water to cool down then shred.
2. In a small bowl, mix all sauce ingredients.
3. In a big mixing bowl, combine the jelly fish, shredded chicken, green onion, ginger, coriander and sauce. Mix well.
4. Sprinkle some sesame seeds to taste and it’s time to ENJOY!
