1/2 lb MED.-SIZE SHRIMP,WASHED,
-PEELED & DEVEINED 1 sl GINGER,PEELED,CHOPPED
1 CLOVE GARLIC,PEELED,CHOPPED
1/2 c CHOPPED WATER CHESTNUTS
SALT & PEPPER TO TASTE 2 tb DRY SHERRY
1 EGG WHITE
1/4 ts BAKING SODA
3 sl WHITE brEAD
SESAME SEEDS OIL MUSTARD SAUCE SWEET & SOUR SAUCE Grind the shrimp,ginger,garlic & water chest- nuts in meat grinder or food processor. Season w/ salt & pepper. The mixture should be paste-like. Add sherry,egg white & baking soda to the shrimp mixture. Spread it generously over bread slices. Trim edges. Cut each piece of bread diagonally into quarters to form triangles. Form a mound in center of each triangle w/ spread & sprinkle w/ sesame seeds. Heat oil to 300 to 325. Deep-fry shrimp toasts until golden brown on both sides. Drain on paper towels & serve w/ mustard sauce & sweet & sour sauce.

【1mintips】This hot n' spicy Mapo Tofu recipe will warm up your winter day!
【Ingredients】
- 300 gram block of Tofu
- 100 grams minced pork
- 2 lengths scallions
- 5 grams minced garlic
- 5 grams ginger
【Seasonings】
part A
- 2 tablespoons spicy bean sauce
part B
- 1 teaspoon soy sauce
- 2 teaspoons granulated sugar
- 100cc of water
part C
- 1 tablespoon cornstarch mixed with water
- 1/8 teaspoon pepper
【Steps】
1. Dice the tofu; cut up the scallions and set this aside.
2. Pour a little oil into a hot frying pan and begin with the garlic and ginger over low heat then add in the ground meat and stir-fry.
3. Then add the spicy bean sauce and saute while adding in seasonings B. Boil the Tofu from step 1. (Important point: Saute the spicy bean curd sauce first then adding the Tofu will maximize the flavor.)
4. Bring to a boil over a low flame and add the cornstarch and water to the Tofu shifting the pan from side to side slowly so that the cornstarch water will spread evenly. Move with the spatula onto a plate and sprinkle with pepper and onions.
(Important point: Mapo Tofu is delicioius but the secret is in the ground pepper. Clean out the frying pan before adding it for a richer flavor.)
Your dish is now ready to be served!!
