An easy comfort food that combines two mouth-watering dishes: beef brisket and mac and cheese. The creamy and cheesy pasta is topped with a savory beef brisket for a complete dish of carbohydrates and protein. It is also a great way to make use of leftover meat.

Ingredients:
1 lb beef brisket, pre-roasted, chopped or shredded, halved
1 cup barbecue sauce
For Mac and Cheese:
12 oz macaroni, cooked and cooled
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 cup milk
4 oz cream cheese at room temperature
2 cups cheddar cheese, grated and halved
salt, ground white pepper, and garlic powder, to taste
For Garnish:
2 tbsp green onions
⬇️ How to make Beef Brisket Skillet Mac and Cheese Casserole ⬇️
0:08 Preheat oven to 400 degrees F.
0:13 Melt butter in a deep skillet or dutch oven and add flour. Whisk until thickened, forming a roux. Cook for roughly 2 minutes, whisking continuously.
0:24 Add milk and cream cheese, whisking until evenly combined. Bring sauce to a simmer, and simmer continuously for roughly 10 minutes or until sauce has thickened.
0:38 Add half of the cheddar cheese, half of the brisket, and macaroni.
0:46 Fold until combined. Simmer briefly until cheese has melted.
0:56 Season to taste with salt and pepper. Adjust accordingly then transfer to a 13-inch baking casserole.
1:14 Evenly distribute the remaining cheddar cheese on top of the mac, then transfer to the oven. Bake for 10 to 15 minutes, until cheese, has turned golden brown and bubbly.
1:23 While waiting, combine the remaining brisket with the barbecue sauce in a saucepot. Simmer until heated through and flavors meld roughly 5 to 8 minutes.
1:35 Season to taste with salt, ground white pepper, and garlic powder. Adjust accordingly.
1:49 Once the macaroni is baked, pour the brisket in barbeque sauce on top. Spread evenly.
1:57 Garnish with green onions and serve.

Unbelievable! Chili Mac Southwest Skillet Recipe
This is just one take on a group of recipes that go by many names: Beefaroni, Chili Mac, American Goulash, American Chop Suey, Southwest Skillet... Hamburger Helper. All of these recipe have three things in common: Ground beef, macaroni, and tomatoes; from that starting point you can add ingredients and spices to make it whatever you want.
This time we chose to use our Taco Seasoning Spice mix to make a cheesy Chili Mac!
Ingredients:
2 cup (250g) dry elbow macaroni
1 large yellow onion
1-2 medium bell pepper
1-2 jalapeno
2 to 3 cloves garlic (optional)
1 pound (500g) ground beef
2-3 Tbsp (30-45 mL) our taco spice
1 28-ounce (796 mL) can diced tomatoes
1 cup (250 mL) beef stock
1 cup (250 mL) shredded cheddar cheese
Salt and pepper to taste
Method:
Put the macaroni in a bowl and cover with boiling water.
Let the macaroni sit in the hot water while you chop up the veg and brown the beef - 10-15 minutes.
Prep the onion, peppers and garlic - chop or dice as fine or rough as you want.
Sauté the ground beef until browned.
Transfer to a plate.
Remove any excess fat, leaving behind just enough to coat the pan.
Cook the onions, and peppers in the pan with the salt until they are soft, and just beginning to brown.
Stir in the garlic, and taco spice, and cook until the garlic is fragrant.
Add the hamburger back to the pan.
Pour tomatoes with the juice into the pan along with the the macaroni.
Add beef stock and bring to a rapid simmer, cover and simmer until the liquid has reduced and the pasta is cooked.
Adjust seasoning with salt, pepper, or more spices.
Spread on the cheese until melted.
Serve with nacho chips and sour cream.
Serves 4 to 6
