How To make Souffleed Crepes
3 Eggs; separated
1 c Milk
3/4 c Flour
1/2 ts Sugar
1/4 ts Salt
2 tb Butter; melted, cooled
These proportions make an eggier-tasting crepe. Beat the egg yolks with part of the milk, add flour, sugar, salt, beat well. Add remaining milk gradually, then melted butter. Beat egg whites stiff. Fold into crepe mixture. They either may be cooked in the usual way in a crepe pan or put into a large buttered pan and baked in a preheated 375F oven for about 25 to 30 minutes. This then becomes something like a flat souffle that can be topped with a filling or one can be put over half the batter, the rest poured on top. Easy Yogurt Cake Recipe
Ingredients (4~5 pancakes)
3 Egg(small)
2Tbsp Milk
1/4 tsp Vanilla extract
45g all-purpose flour
1/2 tsp Baking powder
3Tbsp Sugar
Cooking oil
Direction
In a bowl, separate the egg yolk and white
Add vanilla extract and milk into the yolk and mix it
Sift flour and baking powder and mix it until without lumps
Now, make the meringue
Add sugar in 3 times, whip until stiff peaks
Add the meringue into the batter and mix it gently
In low flame bake it for about 3 minutes and flip, repeat the process
Enjoy with fruits and maple syrup

Ingredients:
For the crepes:
1 cup (125g) All-purpose flour
1/4 teaspoon Salt
2 Eggs
1 tablespoon Sugar
1¼ cups (300ml) Milk
2 tablespoon (30g) Butter
Oil for cooking
1 teaspoon Vanilla extract (optional)
For serving (optional):
Nutella
Cream cheese
Banana
Strawberries
Directions:
1. In a large bowl sift flour, add salt, sugar and stir.
2. In a separate bowl whisk eggs, vanilla extract and milk, until combined.
3. Gradually add the milk mixture into flour mixture and stir until incorporated and smooth. Pour in melted butter and whisk until combined. Let stand at room temperature for 15-30 minutes (or in the fridge).
4. Heat a small non-stick pan over medium heat. Add butter or oil to coat.
5. Pour about 1/-3-1/4 cup of the crepe batter, swirling it to evenly coat. Cook for 1-2 minutes, flip and cook for 30 seconds. Remove from the pan and repeat with the remaining batter. Remember to grease the pan between ease crepe.
6. Serving suggestion: spread 1-2 tablespoons of Nutella, top with banana slices, fold and serve.
7. Serving suggestion 2: spread 1-2 tablespoons cream cheese/sour cream, top with strawberries, fold and serve.

20ml (4 tsp) Milk
30g (3.3 tbsp) All-purpose flour
1.25ml (1/4 tsp) Vanilla extract (optional)
25g (2 tbsp) Sugar
Important tips
1. I used the all-purpose flour in here, you can also use cake flour to make
2. There are 25 grams (2 tbsp) of Sugar in total. Split it into 3 times to add.
3. Whip the egg whites to dry peaks, so the pancakes will come out thicker
4. All the way low heat, about 5 minutes on each side, you can either add a small spoonful of water or not.
