Chickpeas soup with seafood
Today I propose you the recipe of the chickpeas soup with seafood. The ingredients we need for 4 portions are: 600 grams of cooked chickpeas, one kilo of seafood, (in this case I choose mussels, clams and hard clams), 8 slices of bread, 2 spoons of tomato pulp or fresh tomato cut in little cubes, a chilly pepper, a clove of garlic finely minced, 2 spoons of minced parsley, extra virgin olive oil, salt and pepper. Let's start cooking our seafood, so we place them into a pan and we put it on, we add a ladle of water and we cook covering the pan with a lid until the half shells are completely opened. Once the seafood are opened, we shell them and we filter the cooking water. At this point we can start cooking, so we warm 3-4 spoons of oil up in a saucepan, we add garlic and chilly pepper, we let it sauté, we add the minced parsley, and the seafood, letting them become tasty. / Then we add the tomato, with the chickpeas and a part of the seafood cooking water. / So we let it cook for 3-4 minutes. In order to make our soup thicker, we can add 2 spoons of whipped chickpeas. We add some salt and pepper/ and we cook for other 3-4 minutes. Our chickpeas soup with seafood is ready now, so we turn off and we serve with croutons of toasted bread and a bit of minced parsley.
