How To make Southern Pecan Dainties
1 lb Light brown sugar
3 c Pecans; chopped
3 Egg whites; beaten
1/4 ts Salt
1 ts Vanilla extract
Mix all ingredients together. Drop by scant tablespoonfuls onto greased cookie sheets. Bake in preheated 300~ oven for about 20 minutes. -----

The cutest little pies with a sweet and nutty filling!
Pie Dough Recipe:
Cookie cutter of your choosing
Filling:
1 1/2 cup mixed berries
3/8 cup brown sugar
1/4 teaspoon vanilla extract
3/4 cup chopped pecans
1/6 cup (3 1/2 Tablespoons) melted butter
1 egg
1/4 cup corn syrup
Directions:
1. In a saucepan on medium heat, combine the brown sugar and melted butter. Heat until most of the sugar is dissolved
2. Add in the corn syrup, stir until it starts to boil then add in the vanilla
3. In a separate bowl, whisk the egg and then slowly add in the filling a spoonful at a time (this is tempering, slowly adding heat to the egg so it won't cook and taste eggy)
4. Put the mixture back on the heat, and add in your berries and pecans and mix them until they're combined. Boil it until the berries start to break down then put into a separate bowl to cool
Assembly:
1. Roll your room temperature dough out to 1/4 - 1/8 in thick, cut pieces with your ring mold, then repeat until all dough is used
2. Egg wash (1 egg, 2 T water combined) the outside edges of one piece of dough, add the filling to the center, then top with a different piece of dough
3. Dip a fork into the egg wash and press the outside edges down firmly to create a seal
4. Transfer to a covered pan, cut 3 slits into the top of the dough for air to escape, then brush the egg wash over the tops of the finished pies
5. Preheat oven to 350 degrees F, bake 20-30 minutes or until the tops are golden brown

GRANDMA PIERSON'S FROSTED PECAN DAINTIES
(50 CENT PIECES)
Cookie:
1 c. butter, no substitutes
14 c. powdered sugar
2 c. flour
18 tsp. salt
Cream butter, blend in sugar, salt and then flour. Shape into 2 rolls the size of 50 cent pieces and chill. Cut slices 14 inch thick. Place on ungreased cookie sheets and bake at 350 degrees about 10-12 minutes. Should not be brown. Cool.
Frosting:
2 T. butter
1 12 c. powdered sugar
1 T. hot water
cream or milk
pecans, finely ground
Brown butter slightly in fry pan. Remove from heat. Stir in sugar and water. Add enough cream to spread easily. Frost and dip tops in pecans. Makes about 6 12 dozen. May add a little cream if dough becomes stiff. These taste better and better the longer they sit.
