How To make Speckled Soup
1 1/2 c White beans
4 c Water or stock
2 Cloves garlic, minced
2 Stalks celery, chopped
2 Carrots, chopped
1 Onion, chopped
2 tb Olive oil
1 tb Dried basil
1/2 lb Green beans in 1" pieces, or
1/2 lb Zucchini, sliced in
-half-moons 2 tb Lemon juice
3/4 ts Salt
From "Meals Without Squeals" by Christine Berman & Jacki Fromer. pepper to taste 1. Soak beans in water to cover by 2" overnight. Drain in the
morning. 2. Saute garlic, onion, celery, and carrots in oil for about 10 min.
3. Add soaked beans and the 4 c water or stock.
4. Simmer until beans are tender, about 45 min.
5. Add basil and green beans or zucchini and simmer another 30 min
or so, until tender. 6. Before serving, stir in lemon juice, salt and pepper.

Hey loves, here is the recipe.
Beef
Red beans
Onion
Carrots
Garlic
Curry powder
Chilli flakes (optional)
Paprika
Cinnamon sticks
Benny
Knorrox cubes
Steak and chops spice (optional)
Coarse coriander (optional)
Mixed herbs
Origanum
Tomato paste
Red speckled beans
I didn't soak mine I just cooked. It took an hour and 30 minutes to soften the way I wanted
Beef
Fry your onions with garlic
Add your spices
Add your beef
Make sure your meat is well coated with the spices
Allow to cook until there's no liquid left
Then add 2 cups of water with knorrox cube
Close lid and allow to cook until all the liquid runs out
Check to see if your meat is tender if not add more water and cook further
When your meat is cooked to perfection and your carrots
Add your origanum and mixed herbs
Add the beans to your beef,stir thoroughly
Lower your heat and allow to cook for at least 7 minutes.
Remove all cinnamon sticks
Allow to cool
I served this with steamed bread.

Why You Should Soak Beans Overnight Before Cooking
Beans are part of most people's diet. But, do you know how to cook beans?
You may think that just cooking it is enough, but that's not true. Maybe your grandmother talks, or has talked, about how important it is to soak beans before cooking them. But, do you know why?
This trick was largely used to eliminate the substance that can cause gas. And this popular practice was proven by science.
And this procedure isn't good only for beans. It can be used to cook other grains, like chickpeas, lentil and soy.
Letting beans soak for 6 hours, and then putting them soak again for more 6 hours will reduce cooking time and eliminate the substances that cause gas and indigestion.

In today's episode, I made one of my all time favourite dish, ubhontshisi/bean stew. Kindly read through the ingredients below. Thank you!
INGREDIENTS:
1/2 cup of green split pees.
2 cups of red speckled beans.
2 tablespoon of Six Gun spice.
2 tablespoon of Mild curry powder (Rajah).
1 Tablespoon of Mixed herbs spice (Robersons).
3 tablespoon of Aromat.
1 diced onion.
1 diced green pepper.

Lima/Butter Beans
Ingredients:
1 lb. Large Dried Lima Beans
1 large Smoked Turkey Leg or Ham Shank
8 - 9 cups Chicken Stock or Broth, can use 2 tbsp of either Better than Turkey or Chicken Bouillon
Salt and Pepper to taste
How to Hot Flash Beans
Clean and sort your beans.
Rinse in a colander with cold water. Add the beans to a large pot and cover them with about 2 inches of water. Bring the water to a boil over high heat, leave the pot uncovered and cook the beans for about 5 minutes. Remove pot from the heat and soak the beans. Let the beans soak in the hot water for 1 hour. Drain the beans into a colander, rinse and then cook according to your this recipe. Enjoy!
