Spiced Apple Cider Wassail - A perfect cold weather beverage!
Spiced Apple Cider Wassail
1 gallon apple cider
1 - (4.5-5.5 oz.) bag original Red Hots Cinnamon Flavored Candy
2 (0.74 oz) packs Alpine Spiced Apple Cider Original Instant Drink Mix
In a large kettle, percolator, or crockpot, stir all three ingredients together. Heat on low (DO NOT boil.), stirring frequently, until the Red Hots are dissolved. This takes about 10 to 15 minutes. Serve warm. This can be reheated by the mug full in the microwave.

Making an extract from herbs and spices is a great way to create unique flavours for bitters and soda. Though essences capture the aroma compounds, extracts capture the flavour compounds that provide bitterness, astringency and spiciness which helps to rounds out drinks.
Using a percolator is the faster way to make an extract, taking 24 to 48 hours and creates a concentrate that can be diluted to make tinctures, elixirs, tonics and syrups.
