10-min. Korean Bibim Guksu aka as Korean Mixed Noodles. These cold, spicy, tangy noodles are the most delicious way to cool down. They truly satisfy taste bud thanks to the sauce and springy noodles that are like no other! This is probably one of my top 5 favourite Korean noodles.

How to make Korean spicy cold noodles (bibim guksu, 비빔국수)!
You'll love how easy, refreshing and delicious this noodle dish is! Bibim guksu is a cold noodle dish with fresh vegetables served in a spicy, sweet and tangy gochujang sauce. You can add gochugaru (Korean red chili pepper flakes) for an extra kick. You should really double or triple the sauce for more bibim guksu later. You can arrange everything in a serving bowl so it can be mixed at the table. The sauce can be served on top or separately. This allows each person to adjust the amount of sauce to his or her liking. Or, toss it all together before serving.

Ingredients:
Sauce:
3 tablespoons gochujang
1 tablespoon gochugaru (adjust to taste)
2 tablespoons sugar (or corn syrup/oligo syrup)
2 tablespoons vinegar (any clear vinegar such as rice vinegar and apple cider vinegar)
1 tablespoon soy sauce
1 teaspoon minced garlic
1 teaspoon Korean/Asian hot mustard paste, gyeoa - optional
1 tablespoon sesame oil
1 teaspoon sesame seeds
Toppings:
1 small cucumber (about 3 ounces)
1 small carrot (about 3 ounces)
2 ounces red cabbage leaves
2 ounces lettuce leaves
1 boiled egg - optional
Noodles
4 ounces somyeon (thin wheat noodles) or buckwheat noodles

Cold Soba Noodles
@jasmineandtea Here’s a quick & easy cold soba noodle dish to try on a hot summer day ☀️
You just need 3 ingredients: soba noodles, bottled tsuyu (a concentrated Japanese soup base) & scallions
Soba Nudeln in koreanischen Chilipaste (kalt)/Spicy cold soba noodles with korean red pepper paste
ZUTATEN (für 1 Person):
- Soba Nudeln ( 1 kleines Bund, ca. 80g)
- Gurke (1 kleines Stück)
- Kochschinken (1 Scheibe)
- Koreanische Chilipaste (Gochujang) 1 EL
- Knoblauchpulver ½ TL
- Weißweinessig 1 EL
- Zucker 1 EL
- Sesamöl ½ EL
- Gerösteten Sesamkörner 1 TL
ZUBREITUNG:
Sauce (zuerst):
- Die Koreanische Chilipaste 1EL,
- Knoblauchpulver ½ TL,
- Weißweinessig 1 EL,
- Zucker 1 EL & das
- Sesamöl ½ EL
Gut zusammen mischen! (Gochujang enthält Salz, d.h. ist hier kein Salz
nötig)
- Die Gurke in dünne Streifen schneiden
- Den Kochschinken in dünne Streifen schneiden
- Die Nudeln in kochendes Wasser tun
- Wenn das Wasser wieder sprudelt (kocht) ca. 50 ml kaltes Wasser
dazugeben
- Den obigen Schritt noch 2 Mal wiederholen
- Die Nudeln in Eiswasser kurz kühlen oder im Sieb unter laufendem
Wasserhahn kalt abspülen
- Die Nudeln im Sieb abtropfen und abkühlen lassen & in eine Schüssel
geben
- Die Gurken- & Schinkenstreifen sowie die Sauce zu den Nudeln geben
- Anschließend die gerösteten Sesamkörner dazugeben
Gut mischen!
