How To make Hot Spicy Cold Noodles
1 lb Chinese noodles
-(fresh) 4 Scallions (or green
-onions), chopped 2 t Chili oil
2 t Sesame seed oil
2 T Vinegar
2 T Sugar
1 1/2 t Salt
1/2 t Black pepper
-(fresh ground) 1 t MSG (optional)
2 Red peppers (fresh),
-chopped Cook the noodles in boiling water for 3 minutes, then drain. Rinse them in cold water until they are cool, then set aside to drain. Make the sauce by mixing together all of the other ingredients. Heat about 4 T oil in a wok. When it is hot, pour in the sauce mixture, and then the
noodles. Stir well to cover the noodles with sauce, then remove and cool. NOTES: * Easy, spicy-hot cold noodles for summer -- This recipe is an easy prepare-ahead dish for a hot summer day. It makes a good barbecue side dish for all of us who are tired of potato salads. Yield: serves 4-6. * You can serve this dish warm if you want, but it is better when cold. Korean Spicy Cold Noodles Recipe Bibim Guksu 비빔국수
Light, tangy, sweet and spicy cold noodles on crisp fresh spring greens salad.
Korean Spicy Cold Noodles sauce recipe:
Hot pepper paste Gochujang (고추장) ¼ cup
Sugar ¼ cup
White vinegar 3 Tbsp
Soy sauce 1 Tbsp
Sesame oil 2 Tbsp
Korean chili powder Gochugaru (고춧가루) 1 tsp
Sesame seeds 4 Tbsp
3 cloves crushed garlic (1 Tbsp)
Lemon juice 1 Tbsp (helps make noodles more light and bright but can substitute with white vinegar)
Korean Spicy Cold Noodles:
Somyeon/somen noodles, thin wheat flour noodles 소면 200g
handful of salad spring greens
½ cucumber julienned
½ onion thinly sliced
1 hard boiled egg
(serving size: 2)

Cold, spicy, chewy noodles (Bibim-naengmyeon: 비빔냉면)
In this video I'll show you how to make a spicy kind of Korean icy cold noodles called bibim-naengmyeon. It's ice cold and made with a slightly sweet, vinegary, spicy sauce, and cucmber and pear. When you eat it, first thing you need to do is mix it up in the bowl, which is why it’s called bibim, which means “mixed up” in Korean (like bibimbap - mixed rice).

This dish is inspired by Bibim Naengmyeon or Bibim Guksu, two cold noodle dishes that are central to Korean culture. He loves eating these noodles cold, showing how versatile our pantry products are through creative recipes like this one. The finished dish is not traditional, but it’s absolutely delicious. He brought this recipe to life with Momofuku Sweet & Spicy Noodles, Momofuku Toasted Sesame Oil, Momofuku Soy Sauce, and Momofuku Chili Crunch.
